Description
"Delicious", "glorious" and "stunning" are just a few of the words used by recent customers to describe our ales. We pride ourselves on creating a delightful product that people really want to savour; whether it is a pint in your local or a bottle consumed at home. We know that taste and quality are key to the enjoyment and that is why we never create beers that we wouldn't actually want to drink ourselves.

We are really proud that we do this by sourcing the majority of our ingredients from within the UK. Nothing is more local than the main ingredient: water which comes from our own spring at the Brewery. Locally sourced is both key to our brand story and it also means we can create very unique, premium tasting beers.

In terms of our production ethos - our team are dedicated to the business vision of "redefining english ales". It does mean that the Wincle Beer brand is more traditional than some in its styles; but that does not mean we don't like a bit of experimentation! We are fascinated by the use of new techniques to make each ingredient sing ... and a tweak here and there can make a phenomenal difference to the end product. We are also to be very proud to gypsy brew for a number of other brands - some of which are extremely modern in their presentation and taste; and very different to Wincle Beer. This passion for all things beer and knowledge of the process ensures we have the experience and the skill set to deliver any style of beer, ale or lager that meets the criteria and taste credentials required.

Each and every brew follows rigorous process with every beer leaving our brewery 'Character assured'. Over the last 12 years this means that we have created more than 5 million pints with that same zeal for quality on each and every one.

Cask at the sportsman Derby. A clear nut brown coloured pour with a halo of beige head. Aroma is nutty bark, woofyz dried fruits. Flavour is composed of semi sweet, bark dried fruits. Grassy. Dried fruit. Cake. Palate is semi sweet, tannin, decent.

Cask: Poured a deep ruby with a beige color head. Aroma is fruity, malty, semi-sweet. Taste is malty, light nutty, fruity.

500ml bottle @ monthly tasting, Chez Sophie, Nov 21. Thanks Jeremy for this. Clear ruby with a cream coloured head. Yep nicely spiced winter warmer this, moderately rich with a comforting old ale feel. Nice drinkability. Good stuff.

Fun Boy Five: 22nd November 2021, Beer Share in Chez Sophie, Shrewsbury. Five guys splitting beers. 500ml bottle (@7.0% ABV), brought by me. Clear amber body, wispy off-white head. Spiced 'Old Ale' feel to this, something to have in front of a roaring fire, sat in a leather Armchair with your slippers on. I liked it!

500ml bottle from At the Bar. Gluten Free. Amber colour, white foam head leaving lacing and aroma of light citrusy hop. Taste is malt, biscuit, caramel, with some citrus, hop and earthy bitterness. Medium bodied. soft carbonation, dry metallic bitter finish. Quite drinkable.

Bottle with stopper (one for the home brew pile) 330 ml. lively out the bottle. Nose is cherry, massive cloves, spice, cherry boiled sweets, cough syrup, mulled wine, sweet malt, Taste is more bitter than expected, tangerine, spice, heavy cloves, malt, liquorice, aniseed. I can't get passed the cloves which were too pronounced for my taste, but would probably be the beers strength for others.

Bottle at home – originally from their stall at Macclesfield Treacle Market. I often have trouble detecting the nose of a beer, but no such problem here ! Masses of it, dark chocolate, strong black coffee, molasses, a little spicyness. Quite a bit of foam too – a very lively beige head – but it soon calms down. In the mouth the spices are more to the fore, along with dark fruits, and coffee grounds. Finish is bitter – with alcoholic warmth in the stomach. A pretty decent beer to say the least.

Cask at the Wellington, Birmingham. Brown with medium beige head. Light roastiness, chocolate, lactic, sweet. Smooth texture. Medium bodied.
