Description
In 1994, just as the fledgling craft beer industry was starting to gather steam in Colorado, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and started hand-brewing fresh, distinctive ales for the locals in Colorado Springs.
Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

Bottle @ home. I’m a little surprised that I haven’t rated this yet- I guess I’ll have to make a stop by Bristol next time I’m in the Springs. Cloudy, golden orange appearance with a fluffy, cream/tan head. Somewhat grapefruit/orange citrusy, piney hoppy, slightly toasty aroma. Sweet, toasty pale malty, piney, grapefruit hoppy, a touch earthy flavor. Pretty solid IPA.

Bottle @ dan’s house. Brown appearance with a smallish, big bubbly tan off white head. Dark toffee, moderate toasty, mild smoky aroma. Caramel, toffee, fairly highly carbonated, mildly smoky flavor. Pretty tasty but not very smoky.

This ale poured a brownish, caramel colour with a quick living, off white, soapy head. To the nose there are scents of caramel, butter, toast and a very mild grassy scent. First swig was smooth and medium sweet. A little watery with flavours of toasty caramel, dough and a very slight taste of smoke. Finish is thick and sweet with malty flavours and a hint of hopps lingering.

Bottle. Deep Amber with a minimal head. Aroma of sweet malt, port and spice. has a smooth mouthfeel, fruity with a dry full flavour. Leaves a full and pleasant aftertaste that hits every part of the mouth

Slightly hazy straw. The aroma is quite herbal and continental. Some herbal character - half German, half Czech. Ok, but maybe a touch light. Goes better with food than it does on its own. Just enough bitterness.

Amber. Earthy, woody, slightly mushroomy hop aroma. Moderate bitterness, honeyish sweetness. Woody, floral character. OK, well made but not very exciting.

Medium amber. Spicy-fruity aroma. Spicy yeast, light caramel malts. This is balanced, nuanced. Really captures the British character, something you don’t often see from American breweries.

Amber colour. The aroma is mostly caramel. Fairly bitter, but the palate is mostly malts after that, with rich breadcrust character.

Light amber. Mellow floral aroma is fairly appetizing. Mild bitterness. Floral, light bready malts on the palate. Good, balanced example.

Amber and slightly hazy. This has a light caramel nose. Slightly earthy, bready with fresh cracked malt. Not bad for the usual amber thing.
