(My vote 6.6/10) Drank cold. The consistency of the liquid is clear and transparent. The color is a hint of yellow. The olfactory intensity is high, and the duration is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas traces impressions of vanilla, peach, coconut, honey, soy, mineral and apple for a floral and fruity aroma and a light taste. The first impression of intensity in the mouth is of medium strength’s sake. The aroma on the tongue is slightly dry. The body is full. The taste intensity is normal, and the duration is sufficient. On the palate the body is medium. The final mouth sensations are ready to drink. On the palate impressions of cooked rice, herbs, mushrooms, gin and pineapple prevail. VARIATIONS Plus, drunk at room temperature (My vote 6.8/10) The olfactory intensity is high and lasts sufficiently. Floral nose, fruity aroma, scent of fruit, vanilla, white peach, melon, chocolate. The first impression of intensity in the mouth is of robust sake. The aroma on the tongue is slightly dry. The body is round. The gustatory intensity is normal, and the gustatory persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The finish is long, dry and clean. Hints of citrus, vanilla, almond, licorice, anise, soy, kiwi, mimosa and umami linger on the palate for a delicate aroma. VARIATIONS Plus, drunk warm (My vote 7.0/10) The olfactory intensity is normal and lasts sufficiently. The nose taste - secondary aromas finds hints of cooked rice, vanilla, coconut, apple, mushroom and honey for a fruity fragrance. The first impression of intensity in the mouth is of strong sake. The aroma on the tongue is rather dry. The body is full. The flavor intensity is high, and the persistence is good. The taste is pleasant. On the palate there are hints of vanilla, peach, apricot, gin, honey, resin, pine, spices and umami.

The first impression of intensity in the mouth is of medium strength’s sake. The aroma on the tongue is very dry. The body is round. The taste intensity is normal and lasts sufficiently. On the palate the aftertaste is of medium intensity. The final mouth sensations are ready to drink. On the tongue there are notes of white peach, pear, honey, popcorn, resin, pepper, mineral, mimosa and umami. VARIATIONS Plus, drunk at room temperature (recommended temperature) (My vote 6.8/10). The olfactory intensity is high. The continuity is appreciable. The taste on the nose - secondary aromas is composed of vanilla, melon, strawberry, notes of sweet rice and fruity aroma. The first impression of intensity in the mouth is of strong sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high and sufficient persistence. The taste is pleasant. The final mouth sensations are of drinkable sake. The finish is of a clean and dry taste. The aroma in the mouth bears signs of caramel, peach, coconut and banana.

The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the taste persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. Notes of vanilla, white peach, strawberry, spring water, gin, anise and kiwi linger on the palate for a delicate aroma.

Bottle at Arima Onsen. Pours a dark brown with orange tints and a low head. Nose is fruity and malty, grapes, caramel. Sweet flaovr, licorice and umami beans, lightly roasty, fruity, with chocolate and caramel and something like natto. Too estery, too funky, not sure if its got diacetyl too but unpleasant.

Bottle at Arima Onsen. Creamy malt nose, wheaty biscuits, perfumed rice, lightly lemony. Pale gold with the slightest haze and a small head. Sweet honey and biscuits, bit perfumy, rice. Little to no hops, just a touch of bitterness in the finish, which is a little too dirty. Sweet and creamy. Slightly flowery from the sake yeast. Interesting.

330ml bottle @ monthly tasting, Chez Sophie, Nov 19. Brought by me. Misty yellow, white froth. Fruity citric nose, lemon juice. Taste has fresh zesty yeast, not spicy, no coriander, smooth, gently sweet, bubblegummy even. Nice.

11th Nov 2019; Beer Share Evening in Chez Sophie, Shrewsbury. Thanks Mat for this 330ml bottle; BB 19th Oct 2025. Misty yellow body, white topping. Think old style Hoegaarden and you'll not be far off. A very good effort at a style of beer I often struggle with, this held all the correct attributes of the type and I enjoyed it.
