The Verbeeck-Back brewery has been around since the end of the 19th century, when it became one of the most beloved independent breweries in the northern region of Belgium. The brewery was, is and remains a family affair: no monks or big corporations in sight. The secrets of its successes were passed on from father to son until they became fathers themselves... and so on. However, the sons of the sixties-generation had other plans. In 1966, the brewery dozed off for a short nap.

In 2015, a new generation has risen and so has the brewery. The Verbeeck-Back family bloodline was reinforced by the De Cock family. Together, they have formed the formidable, reassuringly Belgian-sounding name Verbeeck – Back – De Cock. VBDCK. This new crop of VBDCK heirs to the family tradition of Belgian quality and craft has literally been digging up history by its roots. They are ripping through the nostalgic silence with KEREL, the beer that says it all, and the transformation of the original brewery and family residence into a new place to stay.

Bottle 33 cl. Pours golden with a slight haze and a small, white head. Unusual spicy nose, reminding me somehow of Sake. Rich, full body, sweet maltiness, again somewhat spicy. But the booze is extremely dominant making this very hard to drink - combined with a bitter finish. Incomparable taste? Well, not so much.... 111121

Bottle 33 cl. Pours a hazy, dark, nutty brown with a smallish, off-white head. Maty nose, toasted malt with a very faint hint of hops. Medium body, now more roasty, some licorice and some bitterness and a slight, underlying malt bitterness, licorice style. The hops in here are mostly of the bittering kind. 111121

Bottle 33 cl. Pours a hazy, deep golden with a lacing, off-white head. Fresh, citrusy nose - although I may not be able to pinpoint grapefruit in particular. Medium body, a dry fruitiness with some neat, citrusy hop accents. Thankfully brewed with a neutral yeast, that doesn't conflict with the hops. Bitter finish. 111121

Bottle 33 cl. Pours a hazy golden with a white head. Faint, spicy aroma. Medium body, again a subtle fruitiness and spiciness and very subdued hops. Pleasant and drinkable, although not an awful lot is going on. At least not dominated by phenols and yeast. 111121

Witzige Flasche, kaum Nase, im Trunk sehr sehr zurückgezogen, Session IPA, wenig Geschmack, leichte Frucht, etwas bitter. Mir zu leise.

Bottle picked up from Bier Paradijs, Maasen, Utrecht, Netherlands and consumed at home Friday 29th October 2021, we had homemade Lasagna accompanied with a Greek Salad, listening to Anthony and the Johnsons - I am a Bird Now. Pours dark brown/black with a white head of light beige. Some chocolate and fruit on the nose, a little bitterness throughout, soapy, almost a washing up liquid taste to this, some raspberry maybe but the soapiness is ruining it for me.

This is really solid. I taste the corn but not the oatmeal. Quite earthy. Seems like an interesting new anti-traditional brewery. Cheeky label ("untouched by monks").

Besteld op 1-03-2021 bij Poseidon Beers en thuis gebracht door Sander op 2-03-2021. Thuis op 2-10-2021 over mijn smaakpapillen laten vloeien.
Kaishaku wordt gebrouwen door brouwerij VBDCK, in 2015 kocht familie De Cock het oude brouwerijgebouw van de familie Verbeeck-Back in Tielrode en vond onder het puin een flesje van het ooit populaire streekbier KEREL, dat door Jules Verbeeck en Laura Back vanaf 1908 werd gebrouwen in hun brouwerij die actief was sinds 1867 en de deuren sloot in 1966 waardoor alle originele bieren verloren gingen. Het flesje werd geanalyseerd en men kon achterhalen welke gist hier gebruikt was. Diezelfde gist wordt sinds kort opnieuw gebruikt in de vernieuwde brouwerij VBDCK Brewery (Verbeeck-Back-De Cock). Bij de Kaishaku wordt er echter nog een tweede (Sake) gist gebruikt. De naam komt van de kaishakunin en dit was degene die de genadeslag toebracht bij een Japanner die seppuku of harakiri pleegde.
KAISHAKU is een wazig goud-blond bier dat bij het uitschenken slechts heel weinig wit schuim produceert in de vorm van een fijne laag met wat grovere bellen tussen, het blijft wel sterk aan je glaswand kleven maar slaat neer tot een fijn randje tegen het glas. Je ziet slechts weinig zeer fijne CO2 belletjes omhoog parelen en op de bodem van het flesje rest nog een gistdepot.
HET AROMA:
Calvados alcohol, stroperig zoet, sterke (alcoholgedragen) honingtoets, banaan, mout, floraal.
DE SMAAK:
Zoet, zeer licht hopbitter, mout, een peperige toets en alcohol
HET MONDGEVOEL:
Een medium body met een volmondige textuur en een platte koolzuur prikkeling.
DE NASMAAK:
Het zoete vloeit uit en voelt licht plakkerig aan, een peperige toets en weer alcohol.
HET TOTAALGEVOEL:
Een verwarmend bier.
HET VERDICT:
Een heel zoetig en vooral een sterk alcoholisch bier. De alcohol en het zoete overheersen hier het gebeuren met hun smaak maar eigenaardig genoeg merkte ik het hoge alcohol-gehalte helemaal niet op. Toch wat eigenaardig en gevaarlijk tegelijkertijd. Het is dus opletten geblazen of de kaishakunin geeft je hier snel de genadeslag. Of misschien kan je beter wegdromen in hogere sferen samen met de ballon van Philippe De Cock.
