As of 5/24/25 Wasatch Brewery beers will no longer be brewed in Utah. They will be brewed in the Monster Brewing network.
“Where’s the beer? Where are the breweries?” Those were among the first thoughts Greg Schirf had after moving to Utah from Milwaukee in the early 80’s. Incredibly, drinking and brewing were all but forbidden. Greg took matters into his own hands and did what any self-respecting midwesterner would do: He started a brewery. Wasatch was the very first brewery in Utah – and one of the first craft brewers in all of the U.S. – brewing award-winning brews since 1986.
In 1988, Greg Schirf proposed another bill to the Utah Legislature making brewpubs legal in Utah and opened the first brewpub at the top of historic Main Street in the resort town of Park City. Wasatch continues to misbehave, turning out naughty beer after naughty beer year after year.

12oz bottle (4% ABV) pours pale gold with thin bright white head. The aroma is very mild with faint notes of sweetness and maybe the faintest note of hops that seem floral in nature. The taste is sweet, malty and grainy with the added vague to spicy hops in there struggling to give the beer some balance. It gets a bit acidic toward the finish carrying lingering grain notes, hop bitterness and just a tad bit of fruity esters.

Rated July 2008. On tap @ Wasatch Brewpub Park City. Pours clear pale gold with thin bright white head. It has a mild aroma of grainy malts and just a hint of lemon zest. The taste starts with tasty fresh grainy type malts. A layer of lemon citrus rides above the maltiness from beginning to end. The finish is dry and refreshing.

12oz bottle (4% ABV) with a pleasing image on the label pours up clear gold with bright white head. The aroma is grainy maltiness to some cereal and a bit of noble hops in the background. The taste has neutral sweetness and hop tartness hitting up front. By midway the grainy and malty and faintly cereal maltiness grows to balance out the hop bitterness. It dries out into the finish and thins out too. I get lingering bitterness and graininess into the finish.

Hazy straw colour. Big apricot, fresh and a little bit yoghurty. Bitter, fairly astringent with a light apricot accent. Slight tartness in the finish. Nothing really comes together here.

12 oz. Bottle. Last of my trade hail from Douglas88; thanks dude. Amazing that no other double bock thought of the name "Devastator." Pours a rich dark amber color, well filtered, rocky white lager head. Smell is rich and malty with a touch of smoke; or is that phenol? Taste is heavily malty, with some melted brown sugar and a bit of grainy texture. Some sugary/saccharine overtones that seem out of place. But this goes down pretty quickly, with no overtones of alcohol, so I don’t have too much room to complain. Clean lager finish except for some malt stickiness.

12 oz. bottle, courtesy, guess who, douglas88! Pours deep amber brown, no haze, with a thin finger of foam in my Sam Adams glass. Foam caves in the center while sticking to the glass. Smell is your basic warm brown malt, gone slightly phenolic, but not too much so. Taste is warm and nutty, with definite roasties from the chocolate malts, giving this a slight stout character. Bitterness stays in the background so its malty aspect stays up front. Gains some peaty character further down. Nice.

12oz bottle-pours a rich/foamy off white head and amber color. Aroma is caramel/toffee, medium malt, peat, musty, some fruit. Taste is caramel/toffee, medium malt, peat, musty, some fruit, alcohol, secondary spicy continental hops, some yeast. OK/mild carbonation. Thanks to Wasatch(BA).

12 oz. undated bottle, from January trade with Douglas88. And poured into a Sam Adams glass. I’m celebrating the 75th anniversary of the return of 3.2% beer with a 3.2 beer (by weight, the way Utah still regulates it). Despite the brown bottle, a slight bit of oxidation. But pours nice, with a slight gold pils color and a thin stream of bubbles supporting a thin lager head. Taste suggests it’s mostly-, maybe all-, grain, with slightly toasty Pils malts. Don’t know what they consider "highly hopped," but this ain’t quite it. But there is a nice peppery note of Bavarian hops, even a touch of Brit. A nice example of a style that needs little alteration to stay suited for a 3.2 state. And let’s appreciate their tip o’the bowler to the 3 Stooges with the pictures of panthers on either side of the word "Pilsner" on the label.

Another American doppelbock, thats two night in a row, however this one is very different. I got to thank douglas88 for this. Pours with a small quickly fading head that leaves no trace of any lacing whatsoever. The color is an illuminating brown, clear but dark enough that one cannot see through it. The aroma has this small aspect that I love a lot, its burnt, dry, pancetta and I dig it a lot. After that there are nutty and earthy aspects. Taste has a nicely attenuated, easy drinking, caramel sweetness with bark and other earthy highlights. Its very well done, very authentic. I love the well lagered feel and flavor without any of the off-putting aspects, you go Utah (this may be the best Utah beer I have ever had). Not so often I can say it so easy to down this doppelbock.
