Description
It was in 1973 that the adventure of the "Au Baron" brewery began. Alain Bailleux then purchased the last bistro in the village there. There he meets Danielle who will become his wife. Together, they embark on small catering. Later, Alain and his father, retired master brewer, challenge each other; create a craft brewery. This will be done on June 8, 1989 when Gussignies inaugurated the village brewery with Saint-Médard, a beer inspired by the farm-breweries of yesteryear. For a few years now, Florence and Xavier have taken over the reins of the family business and continue to make the Baron prosper by adding a local store where you can buy beers and products from local producers.

75cl bottle from Au Baron. Aroma has a nutty caramelised sweetness alongside some saison yeast. Flavour profile sees this nutty side progress nicely, mild fruitcake moments, distant hints of brown sugar, a dusting of winter spice. Really nicely presented winter saison, great harmony of flavour, excellent drinkability.

Draught @ Au Baron. Unclear blonde, good white head. Aroma of saison yeast, light honied floral sweet tone. Flavour profile continues, excellent harmony of flavour, there was sadly no information about this beer on the menu, normally I'd pick out Sabro but it seems very well hidden in this beer, the honey similarly very well integrated, just a lovely saison with a wonderfully balanced sweetness, nice bitter touch on the finish, hits the spot magnificently. --- Beer aliased from original tick of Cuvée des Jonquilles - Session IPA (Noblesse Oblige) on 03 Mar 2026 at 07:54 - Score: Appearance - 7 | Aroma - 6 | Flavor - 6 | Texture - 6 | Overall - 6. Original review text: 75cl bottle. Misty gold appearance with a large white head. Very light, airy palate with a gentle limey citrus and grapefruit hop caress, not detecting the sabro especially, distinctly different tasting than the Noblesse in my opinion with very little farmhouse saison notes coming through.. sessionable indeed

Draught @ Au Baron. Pours unclear amber, good off-white head, looking handsome in the glass. Aroma bears gentle saison yeast, soft amber malt, distant nutty hints. Harmonious flavour profile, great balance, some caramelised malt, light spicy hints, definitely leaning more towards a saison in feel than a French ambree or biere de garde. Could swear it was a blonde saison in a blind tasting. Very fresh. Lovely beer.

Bottle 0,75ltr:This beer looks in my bottle just like a kriek, has its fruitness but not its sourness.
