Founded in 1990, Le Bilboquet is one of the first microbreweries in Quebec. Since then, it has never stopped innovating to offer to its consumers a wide variety of exceptional beers. Le Bilboquet specializes in the production of craft beers, including unfiltered and aged beers.

Bottle: Poured a deep cloudy brown color ale with a medium foamy head with good carbonation and not much lacing. Aroma of honey and sweet malt with some lightly fruity ester. Taste is also dominated by some dry fruits with notes of honey and a well balanced sweet malt backbone with some very interesting fruity ester. Body is full with very limited filtration and good carbonation and no apparent alcohol. Very well done and very interesting take on the style with some well balance sweetness.

Bottle: Poured a pitch-black color stout with a medium light brown foamy head with good retention and minimal lacing. Aroma of dry coffee notes with some traces of black chocolate. Taste is a nice balance mix between some espresso bitter coffee notes with some dry black chocolate. A bit too dry for my taste but still very good with good carbonation and no alcohol showing. More creamy black chocolate notes and less carbonation would have elevated this one to the next level.

Bottle: Poured a slightly cloudy yellow color weizen with a nice size pure white foamy head with good retention and some lacing. Aroma of cloves and wheat malt are dominating. Taste is also dominated by some wheat malt with some distinictive notes cloves. Carbonation is quite good with a full body but lacking some banana ester. Quite good and somewhat surprise by the first offering from this fine brewery.

Sample, savoured at the Mondial de la bière on May 30 2008; eye: brown with red reflections, tiny ring of beige head, no effervescence, no lacing; nose: bitter hops is quite present, caramelized malt, spices, alcohol; mouth: caramelized malt, bitter hops, finale in caramelized malt with a good presence of hops, rather bitter, mildly sweet, full body, low carbonation; overall: quite likable FRANÇAIS Échantillon, savourée au Mondial de la bière le 30 mai 2008; oeil : brune avec des reflets roux, petit anneau de mousse beige, pas d’effervescence, pas de dentelle; nez : houblon amérisant très présent, malt caramélisé, caramel, épices, alcool; bouche : malt caramélisé, houblon amérisant, finale en malt caramélisé avec une bonne présence de houblon, plutôt amère, moyennement sucrée, corsée, faible carbonatation; en résumé : bien aimé

Deep dark stout with a thin moka head. Strong aroma of dark coffee grinds, not bad. In mouth, light coffee and perfumey, but rather light, watery. On tap at brewpub June 14, 2008.
