Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.
Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Bottle 75 cl. Courtesy of kristina. Pours an almost clear yellow with a small white head. Fruity, yeasty and slightly tart aroma. Rich body, quite some sugars, a zesty citric touch, some herbs and again a slight tartness. Ends a little hot. 150313

Bottle generously shared by Seth. Dark brown/black pour with a chocolate head. Great lacing. Cinnamon, caramel and fudge blast the old sniffer. Great body with big fudge, rich caramel, and cinnamon notes that give way to the heat from the ancho chilies. Wow, a real stunner. Good carbonation, good balance, great mouthfeel. It’s simply delicious,what more can I say...

Bottle shared by Kyle, thanks! Pours black with a dark brown head that dissipates quickly to the edges. Aroma has a good amount of chocolate with a light spice with backing dark grains. Flavor has more dark chocolate with a bit of spice and a touch of dark grains.

Pours deep honey with a heavy tan head. Scent is candied orange. Taste is sweetly orange, back to back with bitter orange peel. Fairly sticky/sugary. Bold flavouring.

Cloudy brown beer, tidy pale tan head. Palate is light, dry and crispy. Vegetal squash notes to start. Minerals. Mild cinnamon and other spices. Tiny bit of orange in the crisp finish. Sweet creamy vegetal aftertaste. Interesting!

Bottle. Sweet bready caramel aroma. as well as a little alcohol. Hazy amber with a moderate ivory head. Sweet sugary malt and bitter herbal hops, and light alcohol flavor. Medium to full body, light carbonation, tannic mouthfeel (aka tongue skid).

Courtesy of dak. It pours murky deep mahogany with very little head. The aroma is full up fresh shredded coconut with dark roasted malts, molasses and chocolate brownie. The taste delivers some rich dark roasted malts mingling with a mild chili pepper like spiciness and then a cinnamon to ginger like note. Behind those flavors I get booze and chocolate fudge. Dandy.

Bottle at the Funky 8, Brooklyn, NYC. Kind of odd, but in an intriguing, experimental kind of way. Some ripe fruit action, moderate tang. Pretty OK overall. Drinkable stuff.

750ml at DC tasting. Really excellent. Opaque brown-black, lots of chili pepper notes. but even more chocolate and cocoa nib action. Stand out beer. World Class.

Bottle. Orange malt and citrus peel aroma. Amber with large head. Sweet orange malt and moderately bitter pine/orange peel hops flavor. Nice body. Very tasty.
