750 ml bottle. Nose is sansho, oak, lemon, grapefruit, slightly perfume-like. Hazy gold with a low head. Tart, slightly funky flaovr, sansho, oak, tanni9c finish, lots of citrus. There is a lot of sansho in here, and it was off-putting at first, but I grew to enjoy it, though not as much as the yamamomo one.

Watermelon is pleasantly subtle and goes nicely with the saison feel. Nice stuff!

Lovely stuff. Nice sourness, with a little prickle from the sansho. Rounded sweetness with the tartness. Lovely stuff

Interesting! Initial regular enjoyable saison stuff then a bit of a shock burst of mint. But it’s nice! Quite unsettling but after a while it blends in. Nice!

750 ml bottle from the brewery, mail order. Poured a clear, bright gold with a medium to large head. Not quite as effervescent as the Ripened. Nose is fruity, citrus, tangy, stone fruit, bayberry, oak, lactic acid. Nice fruity juiciness in the flavor, tart, with a bit of sweetness and some oak. Not as tannic and bitter as the Ripened, but nice hay and barnyard notes. This isn't as complex as the ripened, but it's better balanced and more drinkable now. It lacks the rough, tannic finish, but the complexity is somehow hidden by the fruit. Anyhow, it's pretty damn good.

750 ml bottle from the brewery. Pours a rich, deep, glowing golden, almost pastel, with a huge, rocky head. Nose is lemony, orange, lactic acid creaminess with oak and a hint of vanilla. Grass, bit of barnyard hay, and stone fruits underneath it all. Lovely funky nose. Flavor is much drier than expected, with grapefruit and lemon, pith and peel, hay, grass, rye spice, cream, touch of vanilla. Sourness is not stark but not weak either. Finish is a lot of oaky tannins, plus grassy hop bitterness. Body is effervescent and crisp. There is a bit too much oak in this, though, as the finish is extremely tannic and bitter (first time use of the foeders, I believe), which tells me to have to rest with food, but overall an excellent start to this series.

Bottle from the brewery. Pours a lovely, bright gold with just a bit of hazy and a high head. Effervescent. Nose is mint, chamomile, peaches, lemon, a bit of apple. Nicely complex, but the herbal character is the biggest, while not exactly dominating. Flavor is citrus and stone fruit, mint, chamomile and other flowery herbs, grapefruit, lightly spicy. Very crisp and refreshing, great for this almost 30C day. I am not so big on herbal beers, but this is really well done.

Bottle. Creamy, wheat and spelt nose, estery. Slightly hazy, deep gold, with a low, thick head. Creamy, whaety flavor with malty grains and spelt, a bit of diacetyl, then big spelt. Creamy and grainy. An interesting interpretation using home-grown and local grains. Likeable, if not very authentic.
