La Ferme de Billy en Normandie, Calvados. Rots, un petit village bien normand, installé au cœur du Calvados, en Plaine de Caen, aux portes du Bessin, terre de céréales, et terre de pommes.
1651, Jacques de Billy. Du plus loin que les archives et les passionnés d’histoire puissent nous éclairer. Une date gravée dans la pierre de la demeure au cœur du domaine, maison historiquement au toit de chaume, qui appartenait alors à la famille de Billy.
Depuis, dans la famille depuis 5 générations. D’abord bergers, on perpétue, dans la famille, le métier de la terre de père en fils. C’est dans les années 30 que le domaine prend sa taille actuelle, quand René Vauvrecy, père d’Henri – le grand-père – acquiert, avec son épouse Florise, le corps de ferme et ses terres attenantes ainsi que la Chapelle de l’Ortial.

Bottle shared thanks to sjogro at his birthday. Clear brownish with no head. Caramelized apples, light earthy, light juicy, oak, funk, soft alcohol, sugary, light sherry, light herbal. Quite sweet, but also quite some tannic bitterness. Very light sour. Full bodied with no carbonation and quite dry tannic finish.

Bottle shared at home. Dark golden juice with no head. Sweet apples. Sweet yellow and green apples, light cinnamon, soft woodiness, bit Pommeau like aroma, but lighter off coursr, bit of cork, crispy tart in the finish. Quite rich sweet and juicy. Medium body and low carbonation.

Bottle thanks to sjogro. Clear golden with short lasting fizzy head. Sweet apple, juicy peach, light funk and farmyard, leathery. Has nice td tannins and funk but also sweet fruits. Medium sweet and light bitter. Medium bodied with soft sparkly carbonation. Tasty.

Draft at La Cidrerie, Paris. Clear light golden with light bubbles. Dry apple, jight pear, tangerine, white grape, light woody, soft tart apple. Quite fruity and dry, not too much apple but more fruity in a wine way. Light sweet and tart, very light bitter. Medium bodied and medium dry. Good.

On tap at La Cidrerie, pours a clear golden with a tiny, quickly-dissipating head. Nose is fairly neutral, with a touch of funk and light musty apples. Flavour is a little more expressive, with dry musty apples, gentle champagne-like funk, and some earthiness. Finished fairly dry and bland. Pretty muted and lacking the depth of many superior French ciders. Drinkable but unremarkable.

On tap at BBP - Paris, pours a clear golden with a small white head. Nose is full of champagne yeast, lightly sweet apples, and a little funk. Flavour reveals that beautiful champagne / brut yeast, gentle funk, and moderate sweetness. The paradoxical dryness / sweetness that erupts from this is very pleasing. Very good.

750ml bottle. Pours an orange gold colour with a foamy white head that dissipates away. Nose of mucky barnyard and tart apple notes. Flavour is tangy, bittersweet apple, with leathery, barnyard funk, some caramel and dry tannin. Light bodied, spritzy carbonation, drying finish. Nicely drinkable.

75cl bottle. Pours clear gold with overly large receding white head. Aroma of light apple orchard, hay, light sweetness. Spritzy carbonation. Taste has a tight tannic hold and overly bitter skins that overshadow its fruity qualities somewhat. It’s ok, but you yearn for a little more fruitiness to shine through.

75 cl bottle @ hotel room. Aroma has leathery and floury apples. Also some sweetish apple juice. Flavour has floury apples, leathery tones and some juice. Aldo mild mineral tones. Okay but nothing special.
