100th rating for this beer! Deep dark brown coloured body with a cola tint and a thinnish, one centimetre tall tan head. Aroma of pure sugars with caramel, toffee, fruits, figs, dates, earth, candy, caster sugar, honey and way more figs than anything else - incredibly sweet smelling. Medium-bodied; Super deep toasty malts with a bit of figs, dates and earthiness along with a deep caramelised sugar flavour and some earthy notes with a good toasty and deep raisin and fig sweetness on the end that shows quite a bit of bitterness throughout, but nothing too pungent or one-dimensional - all of the deep and bitter flavours show a touch of everything with the caramelised sugars and toffee front and centre. Aftertaste is deep and strong with a great, robust and complex finish with malts, earth, toffee, yeast, sugars and a lot of grain, but more of the fruit and sugar side of things than anything else with this one. Overall, a very deep and incredibly complex beer, despite the fact that it has been aged and the pungent flavours are very well muted throughout showing some of the tastes, but nothing assertive or astringent - this is nice and mellow, while still having a lot of different flavours and complexity throughout. A nice beer, but nothing worth searching out, nor worth keeping in your cellar for more than 3/5 years - this was good, but the flavours were almost too muted and subdued compared to what they might have been if drunk fresh. I sampled this 65 cL bottle purchased from Pear Delicatessen on 18-February-2016 for US$9,90 sampled at home in [the real] Washington on 27-March-2018, just after two years of keeping this one in a cellar. Draft 5 oz pour at Hop and Hound. Enough to get the full idea in a beer like this. Though it's pretty damn good. I could do a pint of this one, just fine. Also, I really need to get out to visit these guys. One of the classics. A near black, mocha pour with plenty of espresso foam head. Aroma seemed to have a slight tart to it, but not enough for me to be concerned. Cocoa, vanilla, wine, whiskey. Quite a lot going on with the aroma. Flavor too. Cocoa powder reminder. Large amount of whiskey notes, as expected. Toasty coffee late linger. A fun showcase of the Woodinville whiskey in this. Warming. Good stuff.

12 oz bottle poured and shared by Eugene. Clean and clear, darker golden pour. Tart apple aroma. Maybe a hint of spice, but maybe just because I know the rye is there. Flavor is much lighter than expected with the 8% tag, as well as with the rye front. Interesting. Very little rye. Not really as advertised, but still a pretty good sour overall. Not bad.

12oz capped stubby bottle. Dirty golden by end of pour. Smells like a slightly spoiling saison with light fruits. Not really a sour verr but more like turning sour. Sweet and lemony as well. Of course.

A mahogany brown verging on black. The aroma is sweet stone fruits and caramel. Light bodied and a bit boozy. The taste is caramel, plums, sweet with heat. Very nice.

Bottle, shared at my 10K rating celebration. Tart nose, cherry, chocolate, wood, some licorice. Black, cloudy, with lace. Great fruity flavor, berries, cherries, vanilla, booze. silky and light with low carbonation and just a bit too boozy. Much better than the silver wax version.

750 ml bottle. Nose is chocolte, wood, spices. Thin black with orange tints, and lace. sour flavor, chocolate, wine, vinegar, cocoa. Vegetal finish. Not so great.

On tap at the Collective on Tap, pours a clear golden with a small white head. Aroma brings out piney hops, some dankness, and dry biscuity malt. Flavour is quite bright, with piney hops, some dank tropical fruitiness, and crisp biscuity malt. Nicely constructed but a bit mineraly. Not bad.

Draft pour at The Collective, Woodinville. A clean and clear golden pour with a quick fading foam head. Tropical fruit constant aroma, very nice. Flavor is a juicy tropical fruit, subtle hop bitterness afterthought. Good mosaic showcase here. Very tasty.
