Description
Our story starts on the rugby pitch, where founder Evan Sallee, Niko Tonks, and Matt Hauck first met while playing for rival teams. The competition turned into friendship and while home brewing together the idea of founding a brewery started simmering. Then, the notion of a cooperatively owned brewery came to life when the three founders had beers together at Black Star Co-op in Austin. Our founders believed the operations of craft breweries were opaque and that there was a gap between being a home brewer and owning a brewery. The founders’ hope was that the co-op model would provide a way for consumers to be more involved in operations while also bringing co-op values to the Minnesota craft beer scene.
That hope resonated with family, friends, and neighbors. Nearly three hundred members joined the co-op before the taproom doors even opened. On September 6, 2014, Fair State Co-op became the first cooperatively-owned brewery in Minnesota, and the third in the country. In the years since we opened, co-op members have helped design beer recipes, picked fresh berries for our annual fruited sour, and volunteered countless hours through our Cooperates program.
The support of members still drives our success. The cooperative’s membership is currently over 1,500 and growing every day. In 2017, we added a 40,000 square foot production facility to meet growing demand in distribution. At the original Northeast brewery, we continue to brew innovative small-batch beers that feature hard-to-source and local ingredients. Often these limited beers are only available at the taproom or through the cooperative’s bottle subscription program, Journeys + Sidequests.

On tap at the brewery. Pours a near clear gold with a white head that dissipates to the edges and laces slightly. Aroma has a good amount of onion with some resin, bitter pine and a sweet grain backbone. Flavor also has some resin with a strong onion note, growing pine and a bit of sweet grain in the finish.

On tap at the brewery. Pours a near clear pinkish orange and a near white head that dissipates to the edges. Aroma has a great hibiscus note with light tart fruits, a bit of acid and a touch of sweetness. Flavor similarly combines light tart fruits and hibiscus with growing acid and a bit of sweetness to cut it.

On tap at the brewery. Pours a clear amber with a white head that dissipates to the edges. Aroma has notes of light grains, a bit of light tart fruit, some flora, a bit of hibiscus and a touch of smoke. Flavor has hibiscus, light fruits and light grain with a slight tartness in the finish.

I really like this brewery but was not very impressed by their imperial stout. Well roasted malt, some sweetness. A little too much roast, overwhelming other flavors and aromas that might be there. Good, thick palate. Some hops come through.

At Fair State. Labeled as Vienna only, with no tea infusion. I suspect this was the base beer. I picked up no tea character at all in the normal version. Copper color; it looks right. Dry malt and bread flavors. Minimal hops, and bitter malt flavor with a dry finish. One of the better Viennas I have tried anywhere. Fair State is setting the bar for lagers in Minnesota.

On tap at the brewery. Pours a hazy pale yellow with a white head that dissipates to the edges. Aroma has a good amount of peach and apricot with a bit of tartness and a light sweet wheat backbone. Flavor is more sour with acid that mellows through the finish where there are notes of apricot, peach and a bit of wheat.

On tap at the brewery. Pours a hazy peachy amber with a white head that dissipates quickly to the edges. Aroma has lots of kombrucha and tart hibiscus with some sweet grains and Belgian yeast underlying. Flavor has lots of tart hibiscus with a growing kombrucha, light fruits and a sweet grain backbone.
