At the Rookery, the fermentable in all our recipes is honey and we never use sugars or syrups. All the flavourings are high-quality ingredients and never artificial flavourings. Most of our meads use hand-foraged ingredients, concentrating on Scottish native species such as meadwort, heather, silver birch sap, crab-apples and a range of hedgerow berries.

Kveldens siste - igjen en 0,35 flaske med voksforseglet kork, delt på RBHD-treff ombord på Fridtjofen, april-18: denne hadde vi rett etter The Rookery Mead, og har et hissigere snert takket være ingefæren. Alkohol både i aroma og varmende smak. Honningen balanserer, og helhetsinntrykket er en elegant og spennende drink.

Shared 350 ml bottle at local tasting, as The Rookery Mead Medium, from Aberdeen Country Fair. ABV is 17%. Golden colour, no carbonation. Boozy aroma of heather honey and fusel alcohols. The flavour is sweet with heather honey as expected, but also some boozy notes.

0,35 flaske med voksforseglet kork, delt på RBHD-treff ombord på Fridtjofen, april-18: mmm, honning og alkoholer i skjønn forening, muligens etpar gule epler. Kanskje et hint av krydder? I så fall må det komme fra lyngen biene har beitet på. En smule endimensjonal, men like god for det. Lang duft, lang smak og lang ettersmak. Den sitter i sikringsboksen. Klar gylden uten skum, helt ukarbonert. Slank munnfølelse når man tenker på at omdreiningshastigheten er betydelig.

Bottle shared with RB/HD on board Fridtjofen 12.04.18. Clear pale golden. No head. Aroma of solvents, apple zest and sawdust. Taste of high alcohols, yellow apple zest and solvents (I presume).

Bottle shared in Hackney - thanks to Scopey. Pours clear, light yellow. Nice arom! Melon, honey, wheat bread. Meidum to big sweet flavour, lots of oily honey, floral notes. Full bodied, oily and chewy, soft. Mild warmth in the finish, more creamy honey, honeysuckle, sourdough. Great fun.

Bottle a clear yellow coloured pour with a halo of white head shared at Leightons place 12/04/2018. Many thanks. Aroma is green opal fruits, pine, lime, floral, perfume,. Palate is medium sweet, lowish carbonation, rounded sticky. Flavour is composed honey, medium sweet lime, pine, perfume. Interesting stuff.

Poured at the 2018 Leicester Beer Festival. Reddish gold, thin and flat. Aroma of raspberry and twigs with some honey on burnt toast. Sweet taste with black raspberry and a harsh alcoholic burn. Thin body. I've enjoyed many of the Rookery's meads but found this one a bit wanting.

Bottle picked up at Belmont St Farmer's Market. It appearance is clear greenish - yellow and a touch oily. The aroma is fragrant, spruce, pine, oily, honey cake, light fruity character, honey suckle and perhaps a touch herbal. The taste is slick, oily, sweetish, but mellow, spruce, green, herbal, floral, soft honey comb and a touch of alcohol warmth with a slick, oily finish. Medium body and oily, slick mouth - feel. Nice subtle nuances to it and never gets particularly sweet. Nice stuff.

From bottle. It pours clear pale gold. The aroma is rich, herbal, peppery spice, touch floral and some mellow honey. The taste is rather dry, rich, earthy, definite sake character throughout, floral accents. warming alcohol, peppery spice and juniper with a drying finish. Medium body and soft carbonation. A rather unique Mead.
