Description
In 2015, Hubbard’s Cave was developed as an alternative to our Belgian Style Ales. Producing American Style ales, primarily imperial stouts and Hubbard’s Cave signature Fresh IIPAs, Hubbard’s Cave is a refreshing addition to the Une Anneé Family. Named after the Chicago Hubbard Street traffic tunnel on Interstate 90/94, next to where the brewery was born, Hubbard’s Cave has quickly grown to produce some of our most popular offerings.

Can, from Warehouse Liquors, Chicago IL. Clear golden with a foamy whitish head, citrus aroma, adequate carbonation, medium bitter malt forward citrus peel taste, smooth body, long finish. Well balanced and tasty.

750ml bottle. Jet black colour with small, frothy, fading, tan head. Sweet-ish, chocolately, dark malty, caramel malty and mildly spicy, minimally BA supported aroma, notes of dark chocolate, chocolate sauce, some caramel, vanilla, a touch of molasses and rum. Taste is sweet and roasty, dark and caramel malty, spicy and BA supported, minimally woody, notes of dark chocolate dark caramel, chocolate sauce, lots of vanilla, hints of toasted coconut, a touch of rum, oak, molasses; minimally warming, alcoholic finish.
Minimally viscous, but substantially dissolved sugar enriched, watery texture, smooth and soft, minimally cloying palate, medium to fine, dense, mildly prickly carbonation.
Quite sweet and sugary, vanilla overload, homogeneous, relatively simple and monotonous - okay-ish sipper, but too boring spend a lot of time with.

Bottle to snifter.
Appearance: dark brown close to black in color with a finger's worth of khaki foamy head which slid off at a nice pace to leave some light lace
Aroma: big roasted dark malts, toasty coffee beans, then cinnamon, maple syrupy vibes; subtle nutmeg, slight vanilla and sweet cream
Flavor: blends all the prior noted aromas together nice and sweet with an ample roasty backing for balance; light aftertaste of dark toast, cinnamon and maple syrup
Texture: medium bodied, somewhat a sipper, eloquently smooth along my tongue with just enough cinnamon to nutmeg strength to slow down any of that smoothness (this is almost unfathomable how well balanced this is!) and then the finish is extremely well balanced through the maple syrup, cinnamon, vanilla and chocolate doses
Overall: another very well done evening dessert beer by Hubbard Cave, I would absolutely love to come back to this!

Can to tulip.
Appearance: burnt orange color with a two finger white foamy head which slid off at a delicate pace, light lace graced the glass.
Aroma: nice citrusy to sweet grassy to bittersweet floral and grapefruity hoppiness up front, light cracker malts underneath
Flavor: blends all the prior noted aromas together bittersweetly with a light aftertaste of the grapefruit and sweet grass
Texture: medium bodied, almost a sipper but seems to be a touch under; bitterness seems to want to clench my tongue but then shows some restraint; finishes with the grapefruity to citrusy and floral hoppiness
Overall: pretty nice DIPA I believe I could come back to.

Bottle to snifter.
Appearance: black in the pour and black in the glass with a one finger's worth of khaki foamy head which took it's time to dissipate and leave some light messy lace
Aroma: milk and dark chocolate scents up front with an ample dose of sweet to earthy coffee qualities rolling in then a subtle maple syrup vibe blends in
Flavor: takes all the prior noted aromas sweet and roasty with a mild touch of bitterness underneath; sly aftertaste of maple syrup and chocolate
Texture: medium bodied, leaning towards being on the sipper side; very smooth along the tongue; long finish of the maple and chocolate tones
Overall: a very enjoyable dessert beer I would welcome again!

Can to tulip.
Appearance: dark brown close to black in the glass with a three finger khaki to tan foamy head. The head dissipated nicely to leave some light lace
Aroma: roasty hazelnut up front - semi-sweet with dark chocolate, light milk chocolate and some dark toast, light tones of milk chocolate
Flavor: blends the prior mentioned aromas fairly nice and sweet, delicate roast trying to blend in, mild aftertaste of milk chocolate and hazelnut
Texture: medium bodied, decent as a sipper; fairly smooth along my tongue; finishes fairly smooth with the roast stifling some of the sweetness
Overall: definitely a well balanced imperial pastry stout more than worthy of coming back to as an evening dessert beer.

Can to snifter.
Appearance: black in color in the glass with a one finger khaki foamy head which slid off nicely to leave some messy lace
Aroma: milk and dark chocolate with some toasted coconut and sweet vanilla bean-like vibes blending in, then a subtle sweet coffee to semi-earthy toned coffee thing going on underneath
Flavor: mildly sweet through the prior noted aromas with a touch of earthy bitterness; coconut seems to try to stabilize but also seems to fall off a little bit, subtle aftertaste of the roasted malts, vanilla and coconut
Texture: medium bodied, between sessionable and being a sipper; pretty darn smooth on my tongue; finishes fairly smooth with the coconut and vanilla and milk chocolate
Overall: not a bad imperial pastry stout but perhaps not one of their higher rated best works, did I find the "weakest link" on their beers, maybe I did but that's just comparatively speaking.
