Description
Casita Brewing Company is owned and operated by Ryan and Mahalia Witter-Merithew. Ryan is a seasoned brewer, having worked as a professional brewer in Denmark, England, and of course, the United States over the last thirteen years. Mahalia is the heart of the business and the president of the company.

Casita started as a contract brewery at Hill Farmstead Brewery in Greensboro Vermont in 2015. In 2017, we moved this business to our home state of North Carolina, where we produced our beer at Duck-Rabbit Brewery in Farmville. In 2020, we are set to open our very own brewery and taproom in Mahalia's hometown of Wilson, NC. We will be open to the public by August 30th.

Over the years we have brewed over 50 different beers under the Casita name. Ryan is excited to bring this creativity to our new taproom, where we will be brewing some old favorites as well as some new beers we haven’t even dreamed of yet.

The logo for our brand is a letter 'C' in the shape of a little house. The 'C' of course stands for Casita, but it is our hope this 'C' will not only represent our brand, but a lot of our other favorite words that start with 'C', like craftsmanship, creativity, compassion, and community. These are the key principles of our business.

Panda, courtesy of SHIG, pours with a deep dark colored body that supports a thin dark tan colored head of bubbles. The aroma starts off with a blast of booze followed quickly by dark chocolate and thin echoes of vanilla. The taste delivers smooth slick modestly sweetened dark chocolate that quickly picks up a growing chili spiciness conjuring up warming in the back of the throat. To midway the boozy heat and the chili heat conspire together to grow the burn into the finish to pleasing heights of yum. A few more sips and vanilla becomes more and more noticeable at the edge of the flavour experience. Solid sipper.

Panda at home, thanks to SHIG, 10/09/23. Pitch black with a dirty tan cap that dissipates edgewards. Nose is dark malts, chocolate, charr, light spice, molasses, mellow roast, vanilla essence. Taste comprises tonka bean, spice, charr, booze, light salt kiss, molasses, dark malts, charr, cacao nibs. Medium bodied with bite, fine carbonation, semi drying close with a balanced kiss of alcohol. Solid impy stout.

Pint can, courtesy of MicroGrog, pours with a deep dark black mahogany colored body that has infrared hued edges and supports a nice mocha head of foam. The aroma offers up loads of depth and intensity with chocolate and orange candy nuanced red wine flowing into chocolate fudge, booze and a bit of winter spices. The taste delivers slick sweet malts bleeding into an increasing chocolate to fudge depths. To midway the cherry and orange candy meet up with a thin tannin wine character as well as molasses and mild blunted winter spices. Solid big bold integrated sipper.

4oz sample at the Roost pours an opaque black with a ring of beige head.  Nose has mostly chocolate and booze, some malt and caramel, raisins and nougat.  Flavor follows, mostly Charleston Chew and the rest.  Medium bodied, off dry finish.  Its fine.  It's drinkable because the AbV is low, but unspectacular.  6 4 6 3 13

16oz can pours a murky yellow with some rocky and lacey white head. Nose has oats and malt and perfume and melon. Flavor same. A touch sweet. Full bodied. Meh.

Panda, courtesy of SHIG, pours with a deep dark colored body that supports a thin mocha colored head of bubbles. The aroma offers up sugary marshmallow nuanced dark roasted malts, candied almonds and then booze soaked chocolate. The taste delivers smooth sweet malts, sweetened dark roasted malts and chocolate growing into some nuttiness and a blunted cinnamon spiciness. To midway some modest booziness bubbles forward and joins up with tasty lasting chocolate goodness. Nice balance and depth.

Hazy light orange, white head, moderate lace. Juicy lime, lemon, and stone fruit aroma. Nicely bitter on the close. Tasty beer. Plenty of flavor.
