Always experimenting and expanding
We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.
Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Hops Hill, Brooklyn tap: pours golden with white head. Aroma is citrusy and resiny and a bit piny. Definitely not a NEIPA, which is sort of refreshing to see from a Vermont brewer. Hefty body but still pleasant to drink. Some sweetness. Moderate levels of bitterness. Good..

22 oz. bottle purchased at the brewery. Fresh bottling. Color is a a dirty orange, light head. Flavor is on the sweet side with the malts taking over the hops.mCaramel and toffee give a lasting sweetness with weak grapefruit, candied oranges, and sugar. The ABV is not noticed because the huge sweetness. Body and mouthfeel are chewy malt and a lingering caramel. Entirely too sweet.

4 oz. draft at the brewery. This Batch was marked at 9.5%. Aroma shows Plenty of pine, tropical fruits and citrus notes. In the flavor the Simcoe is not overdone. Citra / fruit profile complements the pine. Mild resin underneath the fruit. 9.5% ABV is totally hidden. Dangerously drinkable and drinks lower than the gravity of this brew. Very impressed!

4 oz. draft at the brewery. Keg at been recently moved. Lots of turbid sentiment. Aroma is pretty nice; pineapple bits, mango pulp, tart fruits. Also mild pine resin. Flavor hits the palate with plenty of fruit right upfront and turns into a lightly pine resin finish. Bitterness is held down slightly by the fruit and malt bill. Very tasty and should be enjoyed on draft.

4 oz. draft at the brewery. Slight hazy pale yellow color. Aroma is almost exclusively fresh squeeze pink grapefruit juice. The flavor has a mild bitterness with a slightly tart pink grapefruit. Lingering tart and bitter finish. Good balance but a lot of juice.

A hazed golden blonde DIPA with a thin white head. In aroma, loads of citrus pulp, resinous and piney hops, light mineral notes, biscuit malt, very nice. In mouth, a nice sweet fruity biscuit malt with resinous citrusy floral hops, grapefruit pulp, nice and smooth. Bottle from brewery.
