Many people ask us, why Dallas? That's an easy question to answer. Because of the water! The water here in Dallas is so soft that it allows us to brew any style of beer. Through the years we have brewed over 38 different beers of our own plus a large number of contract brews. We LOVE beer!
Dallas may seem like it is in the middle of nowhere, but it really isn't. It is a short jaunt from the Twin Cities and is located along a shortcut from there to Northwest Wisconsin's vacation land. We are only 10 miles off of Hwy 53 and 12 miles north of Hwy 64. It is a beautiful drive no matter which way travel to Dallas!

Nothing special to look at. Aroma is mostly caramel malt with a bit of hop. Flavor’s a bit similar to nose, more hops but they taste old. Body’s ok. Ditto finish.

22oz bottle shared at tasting with Madison crew at Ryan’s. Unfiltered black brown body. Pretty nice sessionable black licorice Black IPA. Clean and minty, but the black licorice is over the top. Unique. OK. Decent.

Bottle - pours a light, clear orange - a simple, straightforward, well-executed smoked lager - nose is rich beechwood smoke, with just some clean underlying malt sweetness and light hops to keep the nose being nothing but smoke - soft carbonation, medium to light body - flavor has some toasted marshmallow and campfire goodness - the malt base is simple and clean, really just allowing the smoke to pop - there is some undue, strong bitterness on the tail end, along with some unwelcome acidity on the tail end that I sometimes taste in smoked beer - other than that, though, this one is seriously under-rated.

22oz bomber. Bottle opened with just a faint hiss, and pours with about the same undercarbonated look. Deep cherry-burgundy-brown body, unfiltered. Not much of a head, some oily residue and some soda-like bubbles. Smooth, muted malt aroma, some oak. No real hop tones, thinnish toffee malt feels. The oak gives it an oily,slick mouthfeel. Drinkable, true-ish to style.

12oz bottle. I bought it at Woodmans in Madison in March of 2014...so maybe this is the 2014 version? Deeper colored body that you might expect, quite amber brown, filtered. Oily thin off-white head. The hop aroma certainly isn’t that impressive or what I had been hoping for. Earthy, with some interesting fruity tones. Better than most Valkyrie beers, which is to say it isn’t infected of off. Sort of soft carbonation, lacking some depth, but the hops come out the more you sip at it. Not unlike Sierra Nevada Flipside in some respects. OK.

12oz bottle. Hazy tan-orange body. Thin non head. Herbal tea aroma. Really an odd creature. The spices take center stage..faint thin, clean golden malt in the background. Malt beverage indeed. No classical beer flavors...this one is a weird and heavily herbed and spiced...Drinkable, thin body.

12oz bottle. Unfiltered brown-burgundy body. Thin, oily, beige head. Mellow roasty chocolate aroma. Big, oily, roasty brown chocolate notes, caramel, some faint coffee dryness too. Chewy, sweet, rather rich flavor. Medium bodied, very drinkable. Didn’t grow on me as I sipped on it..amber malt earthy undertones.
