Classic Allagash here - not overly showy, just really solid and massively drinkable. Some nice mango, citrus, soft rindy bitterness, supportive pale malt sugars. Faint herbal hop, little pine. Great stuff overall.

375mL bottled November 2023, drunk September 9, 2026.
Spicy, funky cherry with a hint of bourbon in the background. Not like the bourbon you get in most BA Imperial Stouts, for example, but with more oak and spice and quite a bit more subtle with a bit of liquor. Bright and fruity with a mix of lactic and Brett and good Sacch to anchor it. No booze noted.
Quite a bit maltier than the nose would suggest, though their Tripel is quite malty so it's not surprising. Nice to see it hasn't been overattenuated in almost 3 years. And there's that lovely bourbon character in the background; spicy and liquorish without any obnoxious alcohol nor too much oak tannin. The cherry is really well-done. Round, fruity, with a ton of mineral, flesh and bright fruit but not sweet or too acidic. Not surprised that adding a tasteful addition of bourbon and cherry to their Tripel produced an incredibly flavorful, complex, lovely beer. I love that they haven't departed too heavily from the base beer. There's very little wild yeast/bacteria here. It's still mostly Sacch.

375 ml corked and crowned bottle from Tavour. 8% ABV. Bottled in February of 2022. Murky brown pour. Brief beige head. Funky, fruity aroma of red fruit. First sip is full of farmhouse funk and tangy strawberry. A hint of barnyard bitterness in middle. Dries out on backend, but never loses its funkiness. A bit of lemon pith in finish.
