Bottle 330ml.Clear medium to dark red amber colour with a average, frothy, good lacing, mostly lasting, light beige head. Aroma is moderate to heavy malty, caramel, dark fruit, moderate to heavy yeasty, light wood. Flavour is moderate to heavy sweet and bitter with a long duration, dry, balanced, dark fruit. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. [20120317]

Bottle via a trade with bu11zeye with a best before of 16/08/13. Pours with a opaque deep burgundy to brown hued body with a lasting, medium tan head with good lace left on the side of the glass. Aromas are are fruity, brandy, big marmalade, vinous, alcoholic, very rich, raisins, chocolate, melanoidin, rich malt, medium to strong ester, alcohol, slightly musty. Decadent and rich. Plums, dark fruit, bready. Flavors are of alcohol, quite dry, chocolate, medium bitter, light roasted note, burnt sugar. Odd bitter balance. No real backing malt sweetness. Some flambeed raisins, roast as it warms. Light musty yeast character. Bitter marmalade. Exceptionally warming, big, medium syrupy, fuller carbonation with a somewhat dry finish. Lasting dry bitterness.

During a trip to Brugge in Dec 2011 I had two 33 cl bottles of this brew, the first in t’Brugs Beertje and the second in De Bierboom: this review is of the second bottle, Daisy’s place being too busy to review in. The original receipt comes from ‘De Vliegende Paard Brouwers’ (Oedelem) but is now brewed by De Proefbrouwerij (Lochristi). Anyway the beer poured a very dark brown colour (almost black) with some ruby hints when held up to the light. The head was a well constructed foam covering of beige coloured bubbles. In the nose, dark chocolate, caramel and fruit cake: theses being the big three in an aroma of great magnitude and complexity. The taste was also very complex, with flavours coming at you from all angles: malty, chocolate, toffee, coffee, mixed dried fruits (raisins, oranges, etc, etc), pepper and wintery spices. It had a mini-bitter hop edge towards the end of each sip too! Even though it sounds (from the smells and taste description I’ve given) rich, heavy and full bodied it isn’t: it’s fairly thin for such a complicated beer, not watery but certainly not creamy or rich in any way. The alcohol content is well hidden and sits nicely within the whole experience of drinking this brew.

Bottle @ Mid March Tasting, Ulfborg 2012. Pours cloudy amber with a small creamy head. Dried fruit, liquorice, alcohol, caramel. Full bodied. A bit of alcohol. Nice.

Ulfborg Scooper Smagning 2012. Chestnut colour with a firm and creamy off-white head. Aroma of caramel and brown sugar, a bit of nuts and some dried fruit. Relatively dry, toffee dominated flavour with nuts and dried fruit, with hints of spice and licorice. Warming alcohol, but not in any unpleasant way. Grassy/herbal hops and a good bitterness in the finish

Squat little 33cl bottle pours clear brownish amber with ruby highlights and a nice tan latte head. The aroma smells a little like Christmas with winter spices, fruit cake, a bit of rum like notes and then some lighter notes of caramel and cherries. The taste is spicy hop notes, spicy yeast notes, spicy winter like notes with cherry, prunes and raisins too. It gets a bit boozy and cherry hard candy like to midway but a thin layer of caramel helps pull it back together. Into the finish the spicy notes return and get a bit resiny at time.
Zythos Bierfestival 2012, Leuven, Belgium. It pours mahogany with ruby red edges and nice creamy looking tan head with some sheet lacing. The aroma offers up thick notes of prunes and dates as well as some roasted malts and chocolate, nice. The taste has some sweet dark fruity esters like prunes and figs but those notes are tempered by somewhat dry roasted malts and some yummy chocolate. Very nice balance is achieved keeping this from getting too sweet. Darn tasty quad.
