Fable Farm Fermentory is a farm-based winery producing aged wines and vinegars, among other herbal elixirs. The fermentory is part of a larger family of organizations working together to steward farmland, develop rural businesses, and promote community experiences.

750mL 2021 vintage bottle drunk 12/17/22. Clear, brassy-blonde-gold. Large, white head quickly recedes to ring. Lovely, bright, sweet, but not sugary, fleshy, well-extracted fruit. Bit of cinnamon/vanilla-like tannin and a nutty and tart backend. Clean, with some mineral and light brett. Soft, mineralesque and juicy apple, nicely attenuated with Brett and lots of pepper and vanilla. It's not a stunner, probably on account of the lack of barrel-aging, but is just a solid, clean, mildly Bretty, mineral-rich, complex cider. Understated, but flawless and flavorful.

It's become quite stunning, developing more flavor, yet more softness, roundness and still engaging but not over attenuated Brett.

750mL bottle drunk 8/13/22 at FOAM. Clear with a hint of chill haze. Pale-golden-straw. Bit of bubbles. Malo-lactic character is dry but with just a touch of juiciness and tons of tannin and pepper. Very classic Normandy with plentiful malo-lactic, oaky tannin and a soft, medium-light body. Black pepper, vanilla, tannin, juicy apple. Excellently done.

750mL bottle, drunk at FOAM on 8/13/22. Soft-toned, hazy oyster liquor. Salinity, mineral, lacto-malic notes and light honey with tart sumac and earthiness. Floral, light yet deep with light barrel character and rustic grain. Tart sumac with malo-lactic acidity leading to juicy, soft honey and lingering oak tannin and vanilla. Not much bitterness from dandelion and a very light dusting of fruity apple skin. Complex, to say the least.

Royal purple, light haze, moderate sediment As Betula and Elder Dandy are complete mindfucks of complex craziness, this is simple, straightforward and thoughtless enjoyment. Bright berry and moderately sweet apple with low grape acidity and a tannic structure. Juicy, bright, balanced, clean.

750mL bottle at FOAM, 8/13/22. Clear hay-straw. Earthy, lightly milky-acidic yarrow (don't know how to properly describe it). Dill, lavender, iron, just all sorts of crazy stuff here. Soft, succulent, spicy herb notes. Honey, citrus, soft oak tannin. Just wacky but good to the nth degree. Soft, soft, soft. Herbal, lactic. Insane, wow this brewery.

Bottle at Shelton After Party. Pours a hazy yellow with small white head that lasts. The aroma is apple skin, pear, oak. Light body, apple, oak, nice tartness, very good.

750ml bottle from CBC Waterbury, consumed July 2020. Pours a hazy gold, ring of white head.  Great nose, green apple skins, funk, juice, green grape, medicine cabinet.  Flavor is tart and lemony off the top, apple juice, tart apple skins, some funk, a little vitamin C.  Finishes tart, full bodied, low to medium acid.  9 4 7 4 15

Bottle pour @ As Is. Wine glass. Clear, light gold, sizzling carbonation. Smells of iron, dried apple cores & white table wine. Tastes of aeresol, lemon, apple skin, apricot, florals, grapes with some sort off history. Soft carbonation, but a quiet ABV for it's size. Tastes interesting enough. Okay.

On tap @ As Is. Wine glass. Magenta sort-ish, clouded pour. Smells of sharp elderberry juice & acetone. Tastes of bitter, tart, iodine, leftover yeast. Acidic apples or grape juice? Faint sourness. Tannic, but very little skin contact flavor. Drying, crispy finish. Meh.

Bottle shared in Canaan, NH. Cheers! Pours clear, pale. Clean and lightly tart, moderately dusty apples present, a bit of salty sweat kick. Light to medium bodied with spritzy carbonation. Fairly clean not the finish. Good stuff on the whole.
