My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

A hazed blonde ale with a very thin white head. In aroma, sweet fruity malt with light honey and lemon, light lactic notes, very nice. In mouth, a nice sweet fruity mix of lime, honey, light tartness, pleasant. On tap at Foam.

Bottle kindly shared by Miro. Light yellow, slightly hazy, with white fizz. Grassy and slightly citrusy, some acidity. Refreshing green apple and some oaky depth. Very nice one.

Row 34 draught, 10/1/22. Cloudy maize-golden. Little/no head. Quite assertively acidic with light-to-moderate acetic notes, oak and moderate-to-heavy lactic acidity. Fruit on the end, though it's not as expressive in the nose as it is in flavor. Funky, with moderate malt character showing lots of biscuit and honey. Quite sour with the fruit acidity combining to give quite a cringe on the finish. Great dragonfruit flavor, lots of lactic and oak tannin with a soft, slick texture showing ample, well-attenuated malt. Maybe just a touch too aggressively sour overall, but still nicely-done.

Smells funky, citric, earthy, grassy, oak, wood. lovely smell. full body, soft carbonation. Tastes citric, grassy, earthy, oak, spices, herbal. Finishes dry and ligh to medium sour with notes of citrus, oak and grassy notes. very good one, very fresh, lovely balance

Foam draught, 8/13/22. Deep golden. Yeah these are intense, acetic. But Idk, there's something incredible about the dots. Juicy, acidic, funky, malty.

Foam draught, 8/12/22. Bright lemon-brass. Small, white head. Oh yeah, that's a dot! Funky poop with spicy, zesty nectarine. Yep, love it. Great acidity but no acetic. Soft malts support. Juicy, bright tart, funky, more acidic than the nose let's on but that's mostly the nectarine. Soft and malty with wheat and such. Lingering prunus-acidity (whatever is most prominent in the fruits of this genus) and soft funk.
