My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

Draught at Foam, 4/7/22. Bright, clear, lemon with some deeper brass hues. White head is small, showing low retention. Lemon verbena indeed, in the nose. Rustic cream of wheat, old yeast (giving the berry-like notes) and mild lactic acidity. Light, clean, dainty, easygoing. Lactic and Brett acidity up front with barrel tannin and light yeast autolysis. Chewy, dry, wheaty-like texture with honey/cereal-like sweetness growing on the finish. Lemon and yogurt grow with warming. Just a solid, approachable, balanced sour. Lovely.

Draught at Foam, 4/7/22. Mildly cloudy, pale lemon-golden. Off-white head slowly fades to ring. Strong peach mixing with lactic acidity, all smelling well-aged/even. Gentle oak, biscuit, cracker and leather peach tannin with no alcohol or flaw. Bright, clean, beautifully/authentically fruited. Like biting in to a peach, though it dries out quickly and fully, with lactic and peach acids lingering tartly and juicily. Soft, malty, well-attenuated and clean with bright, but not overdone acidity. This is phenomenal.

Bottle thanks to John. Pours a hazy orange gold with medium white head that lasts. The aroma is citrus, floral, and oak. Thin body, citrus, honey, light oak, nice tartness, very good.

On tap at MBCC Green Session. Pours a hazy orange gold with white head that lasts. The aroma is yeast, spice, lemon zest, plum skin. Slick body, tart plum, citrus, light funk, very good.

On tap at MBCC Red Session. Pours ruby with small pinkish head that diminishes quickly. The aroma is strong raspberry and ginger. Thin body, tart berry, citrus, ginger, light acidity, enjoyed this.

Bottle: Poured a semi-cloudy amber color ale with a small foamy head with OK retention and light lacing. Aroma of funky ester with some tart notes and oak is enticing. Taste is a good mix of tart notes with some acidity and oak with some nice funky ester. Body is fuller than I was expecting with good carbonation. Nice complex sour with some acidity but balanced to a manageable drinkable level.
