My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

Tap. Little Leeds Beer House. Dusky, rose pink. No head. Nose has cranberry juice. Strawberry soda. Soft, herbal spice. Bit of a Cantillon Kriek thing going on here. Taste is tart, vinegary, and a little dry. Perfect palate cleanser. Finish is tart, and lightly sour. Lots of fruit throughout. I’d happily do plenty of this.

Draft at the source. Red, deep a,her appearance. Aroma shows oak, red wine, funky yeast, strain of Brett. Flavor has a substantial mix cultured yeast, tannic red wine, old whiskey. The whiskey and the wine clash. Finish is tart and funky. Sour oak and funk. This is is not my style of beer at all.

Échantillon au Bières et Saveurs 2017. Couleur rouge vin trouble, anneau de mousse rosée sur les parois du verre. Arôme vineux, alcool, pointe de fraise. Goût vineux, légère acidité, alcool, boisé surtout en fin de bouche. Carbonatation moyenne-faible, corps moyen.

Bottle 500ml. corked @ [ pre-TTOD(U)RBSG17 - The Tenth Official Danish (Ulfborg) Ratebeer Summer Gathering 2017 ] @ fonefan - Brugmansia house, Denmark. [ As House of Fermentology Red Dot ].Light unclear medium orange red colour with a average, frothy, good lacing, mostly lasting, off-white to light pink head. Aroma is moderate malty, pale malt, sweet malt, moderate hoppy, moderate yeasty, tart, minerals, sour berries - cherries. Flavor is moderate sweet and acidic with a long duration, tart, sour, frutiy - berry, mega dry, mega tart, for me to tart and sour. 37.5 cl bottle. Pours hazy orange to brown with a small white head. Aroma is bretty, fruity and slight sourish. Sourish. Dry and solid fruity. Dry and fruity finish.

Sampled @ 10th Danish Ratebeer Gathering, Ulfborg, Day 1. Quite hazy dark orange to faint reddish color, average sized off-white head. Aroma suggests a sourish beer filled with red berries and perhaps a touch of unripe fruits. Taste is very very very sour, if you drink this as your first beer of the day it will be your last, but now, in a tasting, as we’ve had a couple, it’s just doable. Still, to be fair, under any other circumstance I couldn’t have drunk this at all. I managed three sips now and the inside of my mouth is completely numb from acidity. It’s over the top. Too bad, it had such a nice aroma.

Bottle, TTOD(U)RBSG17. Cloudy amber, white head. Sour berries aroma. Very sour, tart vinegar and light acetone flavour. Berry flavour is drowned out. Puckering. Challenging but wins a little in the log run.

Sampled @ The Tenth Official Danish Ratebeer Summer Gathering 2017, Day 1. A hazy bright orange golden beer with a huge most good lasting white head. Aroma of sweet cherries, mild sour cherries, lactose, wood. Taste of quite sour cherries, vinegar, intense sour finish.

Bottle @ Danish Ratebeer Summer Gathering. Nice head with good duration. Color is pink. Aroma and taste are very sour cherries, citrus, lactose acid, malt and is a real plaque remover. Nice sour finish.
