Mixed fermentation Ales aged in oak barrels.

My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

Currently, all of our releases are hosted by Foam Brewers. We have some wonderful beers in the works and will share our next release date soon. Follow Foam's Instagram for full release details.

MBCC 2018. Green. 'Free sauna with your ticket'. Keg. Light haze on this gold beer, small pale cream colour head. Palate is light, very dry and sharply crisp. Very tart lemon. Plums? Buried underneath somewhere. Maybe! Usual sour wild fruit nonsense.

Keg at MBCC 2018 Green (session IV), 12/05/18. Lightly hazed golden orange with a decent off white cap. Nose is tarte berry fruits, spice, grains, funk, stoned fruits. Taste comprises lemon rind, sharp plums, wood must, pissoi, damp cloth, hay bale. Medium bodied, fine carbonation, semi dyring close with balanced acidity. Ok Sour.

Draft at Foam in Burlington. Chillhazy amber color solid white lacing. Aroma of tannic red wine and port. Taste has tannins sour cherry vanilla tart plum. Tasty

Nice fizzy-creamy mediumlasting head. Aroma is slightly dry sour-ish fruity, soda powder, unripe berries, sour plums, oak, grass, fruit stones, minerals, bark, lime, berry skin. Taste is slightly dry sour-ish fruity, soda powder, unripe berries, sorrel, oak, sour plums, berry skin, citrus acid, mild vinegar, grass. Medium bitterness, dry sour-ish fruity mouthfeel. Nice.
