My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

Pours dark pink, medium white head fades instantly.smell is intense, raspberry. Tad dry, oak, tart. Taste is full, very mineral, dry, very oaky, raspberry, ginger gives some spice. Very complex, lovely beer ! Perhaps a tad strong in acidity.

Nice fizzy-creamy mediumlasting head, nice slightly hazy light reddish color. Aroma is fresh sour-ish fruity, sour red berries, soda powder, oak, sorrel, berry skin, flowers, red currants. Taste is dry sour-ish fruity, soda powder, sorrel, berry skin, sour red berries, fruit stones, hay, flowers, red currants. Medium bitterness, dry sour-ish fruity mouthfeel. Nice.

Tap at MBCC 2018, green session. Unclear amber color with white head. Aroma is peach, nectarine, plums, a bit spicy. Taste is nectarine funk, again plums, leathery, yoghurt. Silky mouthfeel with low carbonation. Good!

Tap at MBCC 2018, red session. Hazy orange-ruby color with white head. Aroma is yoghurt, cherries, cocktail cherries, raspberries. Taste is yoghurt, cherries, quite acidic. Oily mouthfeel with medium carbonation.

500 ml from the brewery. (Stood in line like an idiot) Nice red color, no head. Aroma is raspberry forward with oak. The flavor is actually pretty good! Oak balances the berry and lemon zest. This is a nicely balanced for a sour ale with plenty of tartness.
