Mixed fermentation Ales aged in oak barrels.

My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

The aroma is strong raspberries with mild wine. Strong sharp raspberries throughout the sip with mild wine in the finish. Pretty bold pucker in the glands. Very old school sour ale.

Bottle shared by CLWβ€”thanks, Chris! Lightly hazy, bright yellow, nice sparkle, ring head, no lacing. Aroma strong oak, tart fruit, raspberry, basement funk. Taste strong oak throughout, tart back of mouth 1st half, Cabernet 2nd. Smooth,frothy, soft carb.

Rich, intense, beautiful yellow raspberry with soft, minimal oak and soft wheat. Low acidity but ample. Juicy and mild funk with lingering oak and malt.
Zippy and tart in the flavor but the acid doesn't cause cringing. Juicy raspberry, moderate lactic culture and soft, gentle oak tannin providing structure. Never fatigues and the malt is light enough. As the raspberry and oak fade, some fruity, acidic, rich red wine picks up its place. For all that's going on here, which is a lot, it just manages to remain lively and fun and doesn't bog down too much in wood and acid.

Rogue Island draught, 3/13/25.
Drab grey-olive. Clear. Small ring of bubbles.
Lightly hoppy, with herbs, pepper, leafy vegetal notes. Not acidic, with ample base malt (honey). Fresh mineral. Not funky, but interestingly fruity, tart.
Light, lightly juicy, lightly tart, soft and engaging. Gentle hops with pepper, herbs, slight citrus. Clean and easygoing. Like a light version of Self-Reliance.

Foam draught, 6/16/24. Lightly hazy, amber-auburn. Dark beige head is small, creamy. Gentle, well-aged acetic with plaster, mineral, cellar, heavy mineral. Bright acidity on the end with supple malts. Juicy cherry and earthy mineral with surprisingly low acid on the malty, almost oaty finish. Creamy, soft, malty. I wonder if this is the BA version of the Foam beer of the same name? Seems like it. So mellow and drinkable.

Wish they dated their bottles but it's a 375mL I believe 2022, drunk 6/3/23. Clear dark purple-raspberry. Small, off-white head to ring quickly. Big oak notes, wow. But not unenjoyable or overdone/too tannic. Berries somehow don't acidify it too much and there's not too much grape character. Malts seem biscuity and lightly sweet with lots of nutty wheat. No alcohol or flaw. Very clean, not funky, with just straight lactic and lightly brett. Soft, juicy, oaky, hint of grape with juicy currant but restrained acidity. Great malt depth and attenuation. Blackberry is lightly tart with sweetness that helps balance. Hint of vanilla and more oak. Lingering brett but really, really easygoing on the acidity. Clean, no alcohol. Some very slight funk develops with breathing but I would use a bit more.
