My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

Bottle @ Fonefan Summer Gathering. Hazy amber red with an off-white head. Aroma is sweet, malty, tart cherries and wood. Flavor is quite sweet and extremely acidic. Dry and extremely acidic finish. 180817

6 3 1 1 1 Bottle shared at Danish Ratebeer Summer Gathering ’17. Very hazy reddish orange with a white head. Aroma of citrus, tart blackberry, vinegar. Flavour is heavy sickeningly sour. The sort of sour that roots your teeth, burns your throat and then proceeds to burn run its way through your insides coming out as a second bum hole. Undrinkable and aweful.

Tap into a teku showing moderately filtered merlot red with white foam lacing.3 The nose shows strong red vinous notes. The palate is light bodied and well carbonated. Merlot forward (plum, cassis) with light astringency and a strong red wine bitterness.

Bottle thanks to Squiggz. Pours a cloudy copper with medium beige head leaving spotty lacing. The aroma is dark fruit, figs, oak, licorice. Medium body, leather, figs, licorice, light oak, good.

The appearance was a hazy dark pink color with a finger’s worth of white foamy head that fell off at a moderate pace. Light speckled lace.
The aroma started with the tart yet sweet cranberries letting in some light orange zest, some light freshly cut grass, then pine. Some super light tones of honey and light woodiness round out the edges.
The flavor firmly blends the sour to the tart bringing the cranberries in tightly to the warmth of some woodiness and orange zest. Aftertaste is super light, seemed barely there, it’s somewhat spritzy with the tartness of the cranberries. No finish.
The feel was medium bodied with a good sipping quality about it. Carbonation felt good. ABV felt good.
Overall, another nicely done sour by the House of Fermentology.

Poured into a tulip, the appearance was a golden yellow color with a finger’s worth of swiftly dissipating foamy white head. Not much lace, and what there was, slid into the glass.
The aroma had some soft sweet orange pulp, somewhat juicy and blending upon some rind-like portions to some dry woody edges. Some citrus zest concurs with ginger to play fairly nice in the final arrangement.
The flavor took the previously mentioned aromas to blend sourly edged with some zestiness, light tart and a touch of sweet. Light spice from the ginger accompanies some light bitter. Aftertaste blends the sour to the bitter with a little bit of pucker. Finish was basically the same.
The feel was almost medium bodied with a good sipping quality about it. Despite the assumed sessionable sort of feel from the ABV, this is not to be gulped. Carbonation felt good.
Overall, nicely done sour ale by one of Vermont’s finest breweries for this style.

A hazed golden ale with a thin lacing white head. In aroma, beautiful sweet fruity mix of Brett, lactic acid, ground cherries, Epsom salts, very nice and complex. In mouth, intense and puckering tart ale with light ground cherry, light Brett, light lactic notes, well balanced, refreshing and smooth. On tap at brewery.

This was poured into a tulip.
The appearance was a mostly clear pale golden/yellow color with a tight little foamy white head. Sly streaks of lace, just slides right on into the beer.
The aroma had a nice sour fresh leafy to oaky funkiness up front. Some vinegar, light citrus.
The flavor freshens up with a big tart to funky flow of citrus pith. Sour to tart and vinegar-edged aftertaste. Quick sour finish.
On the palate, this one sat about a light to medium on the body with a fair sessionable to somewhat of a sipping quality to it. Vinegar seems to create a slight oiliness strolling over my tongue. Some lactic grip shows it’s effects on my tongue (was waiting for that, took a little bit to actually show), nice feel!
Overall, quite impressed how the feel changed during the consumption of the beer. I never experienced a sour ale do that. But if anything, this was quite worthy of having again.

Keg at Foam Brewers, Burlington. Cloudy copper colour, small head. Vinegary blackberry aroma. Dryish and spritzy with medium body and rounded mouthfeel. Oaky with mild vinegar and black currant., notes of licorice Low bitterness. Intense. Tasty. Not complex but tasty

Draught at the Return of the Belgian Beer Fest, 9/17/16.
Pale, flaxen-gold body, again, with a light haziness and a med-sized, lemon-speckled white head with moderate retention.
Big citrus and sour acids in the nose show a good brightness and blend of lactic and light acetic notes. Finishes with strong lime-like brett notes and a grainy-to-biscuity maltiness replete with light honey and graham cracker. Don’t get much of the honey or honey fermentation character, but this thing seems pretty citrusy and sour, so that’s probably why. No alcohol or flaw.
Round, well-carbonated and fairly well-balanced between the soft malt, honey and souring acids. Maybe tends towards the sour end of the spectrum, but I think the texture is comforting enough, with vanilla-honey, graham cracker graininess and tons of bright citrus character. Lots of fresh, juicy pulp character from the oranges. Not overly complex or funky, but a very well-done American sour, nonetheless.
