My name is Todd Haire and I have been a brewer in Vermont for close to two decades. My friend, author Bill Mares, and I have launched House of Fermentology, a small beer blendery in Burlington, Vermont. We take a slow approach, fermenting and aging beer in oak barrels for up to two years. This artful process creates distinctive and original American wild ale. We use our own mixed culture of saccharomyces and brettanomyces yeasts along with lactic acid bacteria. All of our beers are unfiltered and 100% bottle-conditioned.

Tap @Foam. Hazy orange, medium off white head, great lacing. Aroma is funky, basement, geueze, horse blanket, stone fruit, lemon. Flavor is quite tart, medium musty funk. Medium body, soft mouthfeel. Good. Either this beer has gotten a lot better since Borken tried it, or he has no taste.

Bottle: Poured a clear light reddish color ale with a large white foamy head with limited retention and not much lacing. Aroma of sour raspberry notes with light funky notes is enjoyable. Taste is dominated by strong sour notes with some acidic raspberry notes. Body is about average with good carbonation. Enjoyable though acidic notes are so powerful it limits the depth and complexity of flavours that can be tasted – I could barely taste any lime or ginger notes.

Aroma is moderate malty, sweet malt, caramel, tart, funky, moderate to heavy yeasty, barnyard, leather, plums - honey - peppery. Flavor is moderate sweet and acidic with a long duration, tart, barnyard, dry, earthy, plums - honey - raisin (dried fruit) - vanilla sweet, peppery - peppercorn. (On tap @ Witchstock 2018, Toronto, Sept 29/18) Pours a nearly clear red-tinged amber with a small white head. Notes of red wine and some grape, tart cherries and pit fruit, quite ample wood giving a vanilla character, moderate attic-type funk, light caramel sweetness at the core but drying and tannic into the finish. Barrel presence is quite clear. Medium bodied, slick, softly carbonated. Lovely stuff, HoF has impressed me greatly in my limited sample of their wares.
