Description
Hi-Wire Brewing’s journey began in the summer of 2013 at their 2,700 square foot South Slope Brewery located at 197 Hilliard Ave in the heart of Asheville’s South Slope Brewery District. With the 2015 opening of their Big Top Production Brewery up the road, the original Hi-Wire brewhouse is 100% dedicated to brewing award-winning sour and wild ales and one-off small batch beers.

Brewing beers with a connection to the past is important to us. We love to brew traditional styles that honor the heritage of our craft and pay respect to those who have crafted beer before us. Yet, as an American craft brewer, we are elated to participate in the culture of experimentation that has developed here.

Tap. Pours inky black, merlin beige head, good lacing. Aroma is rich mocha espresso. Flavor is light plus sweet, light plus bitter, creamy. Heavy coffee, but really nice. Fullish body, silky. Good.

Panda, courtesy of SHIG, pours with a mahogany colored body with deep copper hues and supporting a thin tan head of foam. The aroma offers up chocolate covered marshmallow, some oak, tight bourbon and then some soft maltiness. The taste delivers smoothly growing chocolate notes mixed with growing booze and boozy barrel character. To midway chocolate and boozy bourbon mingle and pick up a modest sweet dark fruity ester note and takes it into the finish. Fun beer.

Panda at home, thanks to SHIG, 14/03/24. Black with a khaki head that veers edgewards. Nose is caramel, coffee, dark malts, faint spice, roasted tones, cacao nobs, toasted brown sugars. Taste comprises caffe late, spice, vanilla bean, charr, mellow roast , chocolate shavings, dark malts, coffee grinds. Medium bodied with bite, fine carbonation, semi drying close with a light kiss of alcohol. Decent impy shizzle ... good balance ... doesn't run overly sweet and carries a good coffee bite which helps dampen any rising sweetness.

Panda at home, thanks to SHIG, 14/03/24. Lighter shade of black with a good sized lasting khaki head. Nose is dark malts, fruit cake mix, toffee, bourbon nip mellow roasted notes, dates, cacao nibs. Taste comprises candied fruit rinds, chocolate shavings, good balanced bourbon bite, hint of coffee, dates, raisins, toffee, light roast. Medium bodied with bite, fine carbonation, semi drying close with a balanced rising boost. Tidy well balanced and easy sipping impy stout blend.

10/31/20 Can from Appalachian Vinter. NB goblet @ home. Sticky, lingering, neon white head on this one. Hazed gold body. Smells of mellow pine-y hops & orange creamsicle. Taste is same creamsicle, fresh lime rind, hops taste like rosemary to me. Powdered sugar sweetness. Lingering vanilla & talc on the finish. Mellow carbonation, good acid. If it wasn't for the lactose, I think I would have enjoyed this. Expected much worse.

Lilly and marigold bouquet. Shimmering amber, medium head. Daffodil, marigold. Medium body, easy carbonation. Crazy floral, fairly dank. Great for the folks that are into that.
