Brewing beers with a connection to the past is important to us. We love to brew traditional styles that honor the heritage of our craft and pay respect to those who have crafted beer before us. Yet, as an American craft brewer, we are elated to participate in the culture of experimentation that has developed here.

Notes from 12/02/18 Bottle from the downtown Asheville pub location. SN goofy sidecar glass. Big chewy-looking, ever expanding, lingering, almond-orange colored head. Light, foggy honey ale body. Smells of lemon, orange rind, powdered sugar, dusty crust & softly herbaceous hops. Tangy, sweet & sour lemon/lime, very faded toast-like malt, very light oxidation, plus that somewhat indescribable floral/shroom/plastic/gummy flavor combo that makes up good brett. Body goes down easy (& is on the thinner side), but has a slight greasy feel. The bubbles could have been sturdier. Not what I thought it would be, but enjoyable nonetheless.

Notes from 2/10/19 Bottle from the OG brewery. Baby Duvel glass at home. Opaque, light brown body. Heady, but not sticky lace. Scent is full of bar bitters, greens & light aromatics. Taste is citrusy, lots of pith, pickled acidity, multi-formated bitters. Very tasty blend of acid & bitter, like a good cider. Dry finish with a bit of wanting. Not thin initially. Yeasty, agitated, well carbonated. Finishes with a very obvious gin & pepper kick. Not hot, but a bit intense in flavor. Savoring it, it was one of the best beers I've had in recent memory. Quaffing, it can be very unpleasant.

Notes from 5/11/19 2018 bottle from the downtown brewery location. The one without AC, but is more charming. Duvel tulip. Cloudy, pineapple sort of color with a hint of activity. Sour peach, sour pineapple, guava. Not incredibly potent, as you have to stick your nose in it a bit, but genuine. Bracing peach & lemon upfront. Slick texture. Acetone. Lime juice. Gum. Sour passion fruit on the bitter, lightly herbal finish. Little urgency to refill my glass. Okay flavors, just a bit too cringe-y of a sour, with not enough reward for the effort.

$2.56 pounder from Appalachian. Sold on it not being a seltzer & not much else. Tasty Beverage branded rounded pint glass at home. Clear, hibiscus soda pour, ample soapy & sticky head. Smells of sticky berry juice, hibiscus floral-sour, lemon, soap, preservatives. Taste is pomegranate candy, grape juice, blueberry flavor, powdered sugar, booze. A twinge of bitter Aspirin on the back end. Very soapy. Suddy but soft carb, very low acid, no tartness, grainy finish. A bit artificial. Only tolerable when ice cold.

I know this isn’t a Mexican hot chocolate stout, but it brings into focus how well peppers integrate into this style of beer, and how balancing a bit of capsaicin can be to offset an overly sweet stout. Not that Churro 10W-40 is cloy, but it does come across sweeter and more adjunct-forward than other versions. Not bad, but I’m not finishing this pint with much gusto.

Panda, courtesy of SHIG, pours with a deep dark colored body that supports a nice dark tan head of foam. The aroma offers up a fair load of dark roasted coffee and a bit of dark chocolate that quickly moves into notes of lactose and caramel tussling about at the near periphery of the experience. The taste delivers rich oily nuanced dark roasted coffee with a pleasing near firm coffee nuttiness. To midway thin ribbons of caramel start to twizzle to the surface. This just delivers rich pleasing rich dark roasted oily coffee goodness that's flanked by a sense of dark chocolate from time to time too. Solid.
