The microbrewery is founded by Achilles Van de Moer on the passion for special beers. After 7 years of trials with different beers, the decision to start a microbrewery in Itegem was made in 1999. The brand name of beers is “Serafijn”. All beers are high fermentation brews, with second fermentation in the bottle. Most of the beers are contract brewed, but some of them are also brewed at their own location.

In 2015 Achilles became part of Caupona bvba (of the Prik & Tik stores in Heist-op-den-Berg and Herselt). The brewery is now called ''Brouwerij Serafijn.'' That is the new company in Heist that houses the Serafijn beers. The former microbrewery in Itegem has been dismantled.

The beer is now brewed at the Pirlot brewery in Zandhoven.

On tap at De Bekeerde Suster. Clear deep golden colour, big white head. Aroma of flowers, citrus, light malty, some alcohol. Flavour is light to medium sweet, light malty, citrus, floral, light fruity, light spicy, bitter finish. Medium bodied, soft and slick mouthfeel, light tingle. Nice not too sweet tripel.

330 ml bottle into chalice, no bottle dating. Pours a cloudy reddish orange color with a nice 1-2 finger dense cream colored head with good retention, that reduces to a thin cap that lingers. Some decent spotty lacing on the glass, with a good amount of carbonation streaming up. Aromas of big grape, apricot, raisin, apple, herbal, earth, floral, honey, caramel, bread, and light yeast spiciness. Nice and pleasant aromas with decent strength and complexity. Taste of big pear, apple, grape, caramel, herbal, pepper, floral, honey, bread, earth, and yeast spices. Lingering notes of light fruit, caramel, honey, bread, earth, and yeast spices on the finish for a short bit. Fairly dry on the finish. Very nice complexity of flavor, with a fantastic malt and spiciness balance. Medium-high carbonation and medium bodied; with a lightly creamy and very crisp mouthfeel that is nice. No alcohol presence noticed at all, and this is very smooth to drink. Overall this is a damn nice Belgian pale ale. Very nice flavor complexity and balance; and extremely smooth. Really enjoyed this one.

Bottle 330ml.Clear medium to dark red - orange amber colour with a average to large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, bread, caramel, moderate yeasty, candy, dried fruit. Flavour is moderate to light light heavy sweet and light to moderate bitter with a long duration, candy - dried fruit, caramel. Body is medium, texture is oily, carbonation is soft. [20120317]

Clear pale red brown beer, big creamy beige head, little stable, bit adhesive. Aroma: caramel, mocha, bit metallic, fresh mussels, salty touch like seaweed. MF: ok carbon, full body, creamy texture. Taste: lots of chocolate, caramel, sweet malts, dried dates, fudge, ripe bananas. Aftertaste: mocha, milk chocolate, ripe banana.

Bottle. Frothy white good mostly lasting head. Red-amber colour. Moderate malty and hoppy and yeasty aroma. Moderate bitter flavor. Long moderate bitter finish. Creamy palate.

33cl from Willems en Zoon. Dorée, blanche. Arôme fruité avec un bouquet rappelant un ester banane/abricot, houblonné aspect malt caramel. En bouche, profile bien pétillant, levure, fruité/banane/abricot fermenté et ce côté vieille levure. Le tout fini assez sec, houblonné/citronné et ce côté levure pâtissier/fleuri.

33cl bottle @ home. Clear dark copper to amber color, no head, just a small white to off-white lacing. Smell almost nothing. Taste malts and a sharp spicy bitterness. Fizzy carbonation, low to medium body.

13/02/2012 Bir&Fud Bottega (330ml bottle). Ambrata carica, lievemente torbida, schiuma biancastra con venature giallognole, abbastanza abbondante e persistente. Aroma intenso di frutti rossi, caramello, zucchero di canna, lieviti, spezie e alcol. In bocca è dolce, leggermente stucchevole fin da subito, non perfettamente bilanciata e con un finale non proprio pulito. Corpo medio, carbonazione corretta. Si lascia bere, ma non è niente di eccezionale.

13/02/2012 Bir&Fud Bottega (330ml bottle). Bruna, scura, impenetrabile, schiuma poco abbondante color bianco sporco. Aroma di malto, lieviti, molto speziata, cioccolata, frutti rossi. In bocca è dolce, caramello, ancora un accenno di cioccolato, lieviti, finale appena amarognolo. Non è bilanciatissima, risulta un po’ appiccicaticcia in bocca e stucchevole. Corpo medio, carbonazione corretta. Senza infamia e senza lode.

Bottle @ Mid March Tasting, Ulfborg 2012. Pours ruby amber with a small creamy head. Caramel, grains, nuts , fruit and a bit of yeast. Medium bodied. Good.
