Formerly known as 'La Face Cachée De La Pomme' and 'Domaine Neige' but those names no longer legally belong to François Pouliot. But this is the same orchard where the original ice cider producer continues his business after losing his trademark names in a legel settlement with his former business partners.

Bright, light amber colour. Fresh apple aroma, with light nutmeg. Crazy tart apples with decadent sugar & spice. A little gingery at the end. Fair bit of tartness, especially for a Face Cachee, and this lends an interesting crispness to the usually sugar & spice goodness.

Dark golden coder with a pleasant apple compote nose, complex, with cinnamon notes. In mouth, a tingling apple sweet cider, sweet, maple, with notes of berries. Warming alcohol accompanies the sweetness, smooth and pleasaing. Tasted at Rendez Vous des Saveurs de l’Outaouais, Sept. 24, 2006.

Dégel 03. Yellow cider with fresh apple purée aroma, very nice and sweet. Very smooth dry cider with lactic notes. Like a nice white wine, pleasant and classy. Sampled with Mtl crew, April 16 2006.

Neige 2004. Golden yellow cider. Light apple sauce aroma. Sweet apples in mouth, syrupy, with smooth alcohol notes, delicious and pleasing. Medium to rich vbodies, with viscous qualities. At Salon des Vins et Spiritueux de Montréal, March 25 2006.

A dark orange cider with no head. The aroma contains notes of apples and some rotten fruit. While the flavor also is dominated by apples - again with a slight note of rotten fruit, but also some acidity. The mouthfeel is smooth, but at the same time sticky.

A dark orange cider with no head. The aroma contains lots of apples, but also a slight hint of alcohol. The flavor is wonderful, sugar sweet with strong notes of apples, and a rather dry end. The sourness from the apples bites the tongue slightly.

2003 Bottle drank in 2005: Poured a light yellow color cider with a thin body. Aroma of apple is quite faint and dry. Taste is also very dry with limited amount of sugar. Apples are discernable but seem to be lacking in character. This is far off from Neige or Frimas and therefore probably not something that I will go back to often.

Bottle: Poured a deep golden yellow color cider (probably deeper then the regular Neige). Oak is not clearly apparent but alcohol is more subtle then in the regular Neige which made me enjoy this even more. It seems every those guys touch is excellent.

Golden-brown colour with plenty of legs. Woodsy, earthy aroma with a mix of figgy dark fruits and apricotty bright ones...a little molasses in there as well. More complex aroma than the Neige but perhaps less enticing. The flavour on the other hand...oh shit...toasty, woodsy flavours with soft brown sugar, dashes of malic acid, rich clean fruit and the strong suggestion of nutmeg. Exquisite. Recent vintages have a lot of lychee aroma.
