Perfect appearance as far as I’m concerned. Huge, rocky head is well-retained, white and sits atop brassy-golden body that shows fine, bottle conditioned carbonation. Excellent lacing as well.
Coriander and soft, estery Belgian yeast in the nose are elegant and very clean. The spicing is not overdone and takes the place of what would be a similar hop character (some herbal hop notes can still be found as well). Rich pils malt is sensed, though it’s not overly sweet. Just has a lovely honey character to it that seems strong and resilient. Some doughy character is added to this, giving it a little more heft. It ends on a dry note, with light acidity and plenty of dry, yellow fruitiness. Coriander lasts through to the end. No flaws whatsoever, no alcohol warmth that I could detect.
Perfectly tight, engaging carbonation leads off on a strong note, as light banana and clove notes can be glimpsed beside the stronger coriander spiciness. Doughy yeast character is minimal, while plenty of daintiness is had from the pils malt. Soft is the texture, and very drinkable, leading to a drying finish with a moderate amount of acidity that seems to come mostly from the coriander (and hops?). Attenuation tends somewhat to the sweet side, but it’s not overly sweet, IMHO. Lovely yeast character that greatly impressed all three of us Belgiephiles (Olivier, Jocelyn and myself). Not some cheap Americanized knock-off. Cleaner than most Belgians, you might say, but artfully done with a wonderful texture and malt flavor. A bit too much acidity and some light alcohol sharpness at times (on the finish), but overall, I think the extra 4 or so months has really mellowed this out as compared to the reviews from younger samples. Also, I didnt find too much graininess that others have noted.

Bottle Pours a brown/black witha small light tan head and spotty lacing. Aroma is dark roasted malts and plenty of coffee. Flavor is again mainly coffee and smokey malts. Little Hop bitterness or ABV notes. Medium bodied and a long lingering bitter trailer

Bottle: Poured a dark brown with a modest tan head and nice lacing. The nose is rich with coffee and heavily roasted malt. Coffee in the name, coffee dominates the flavor. More roasted malt and hints of bittersweet cocoa. Thanks Indiana_Red for sharing.

(Bottle 65 cl) Courtesy of Degarth. Pours a hazy, golden with a tall, dense and lasting, off-white head. Aroma of fruit - banana in particular - and yeast. Medium body with fruity and yeasty flavours. The finish is distinctly bitter. Not the world’s most refined Tripel. 230407

Large, foamy white head shows moderate retention, light lacing and tops a deep golden body with some peachy tints. Fine-bubbled carbonation rising sporadically.
Deep simcoe nose shows tons of pine, though it’s not horribly acidic or bitter (there’s a punch to it though). Hop oils are quite fat and push aside much of the malt, though some moderate toasty, lightly sourdough-like malts fight back (munich maybe?). Pine sap and wintergreen sit starkly on the end, with a clean yeast and very minimal malt sugars. With warming and breathing, the carbonation lessens and the effect is to allow the hop aromas to spread out more and become a little more "fuzzy". Not as concentrated, thick and oily, though still displaying plenty of conifer and white grapefruit. Alcohol is lightly felt and the strength of the beer hangs on the end, with a bit of doughiness and dextrinous heft.
Fruitiness is immediately apparent, but it’s a light pineapple-peach flavor that gives way quickly to strong pine and very dry white grapefruit notes. Some breadiness from the malt, maybe, and definitely moderate dextrines. Carbonation is kind of a let down. For a bottle conditioned beer, it’s a bit loose and prickly. Acidity constantly and inevitably builds up, but enough brisk pine and citrus flavors hang on to keep it enjoyable all the way to the end. You know what else? This beer is about 4 months old. No doubt it has lost a lot of its hop flavor and aroma, showing more bitterness than was intended by the brewer. Still must be incredibly bitter fresh, but with that fresh simcoe that still shows through strongly even now.

Bottled (thanks omhper!). Dark hazy brown colour, mediumsized head. Aroma is plum, some dark fruits and roasted hints. Also weak notes of alcohol. Flavour is alcohol, hay, brutal berries and spices along with some glueishness. Finish is rather hoppy and caramellish. Nice one, though it suffers a bit of the glueish alcohol dilemma.

07/09/08. - - Courtesy of tpd975. Pours amber with tan head. The aroma is big and inviting with caramel and rich dark fruity esters of grapes, plums and sweet berries before it heats up a bit. The taste is rich and yummy but does have some alcohol welling up. I get creamy caramel candy and some nutty roasty malts. Then the big dark fruitiness comes in and rides into the finish along with a warming alcohol sensation. Leaves a sweet lip smacking feeling behind.
Sampled at the O-Town throwdown. This beer has a nearly opaque copper color with thin tan head. The aroma is pretty big with lots of dark fruitiness and with hints of caramel and sweet malts. There also seems to be some whisky and alcohol in the background. The flavor is delicious barleywine dark and shriveled fruit flavors with a whisky and sweet caramel under currents. It ends sweet, syrupy and rather nice.
