Description
Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions. In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction. The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States. On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Medium beige head. Clear deep brown body. Perfumy lavender and spice aroma with syrupy notes. Sweetish-dry lavender and cardamom taste with caramelly buttery notes. Mid-bodied. Mild, slightly hot mouthfeel. Dry buttery cardamom, wood and cinnamon aftertaste wooden caramel notes. Interesting and unusual. Heavily spiced, but somehow it works. (0.25l draft at Amundsen, Oslo.)

On tap @ Kick. Cristal clear, golden body with a medium sized off-white head. Relatively light in aroma compared with the other IPA I have sampled from this brewery. Still nice in the nose with malt, citric fruit and some fresh grass. Flavor is smooth, soft malty with moderate fruit, grassy hops and good bitterness. Fine body and bitter aftertaste. Very well made and pleasant IPA but probably not special enough to be totally outstanding.

On tap at Kick. An almost clear golden beer topped by a creamy, off-white head that lasts. The aroma is lovely hoppy, with pine cones, resins and grapefruit peel. Some malty sweetness. Rather dry on the palate, with a pleasant carbonation level. Not much sweetness in the flavor, it’s the hops that dominate. Lots of bitterness, as well as grapefruit peel, pine cones and some resins. Lasting bitter finish. Pretty lovely this one, although almost too dry. Dangerously easy drinkable. 140426

On tap at Cardinal Pub & Bar, Stavanger. Black colour, large tan head. Mild roasty and fruity aroma, notes of cherry chocolates and mild coffee. Smooth mouthfeel. Moderate roasty notes, mild coffee and dark chocolate, only a hint of cherries (I am not even sure I could identify it, if I never knew it should be there). Nice to drink though.

On tap at Cardinal Pub & Bar, Stavanger. Deep golden colour, large white head. Strong sweetish aroma of Belgian ale yeast, coriander, cloves, oranges and mango. Soft mouthfeel. The flavour is a tad too sweet, but has nice fruity and spicy notes throughout, with the same elements as in the aroma.
