Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions.
In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction.
The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States.
On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

On tap at Øltorget, Vulkan. It pours a next to black body under a dense, finger-thick beige head. The aroma has mostly coffee, with some orange peel and roasted malts and chocolate. Coffee-bitter flavor with some alcohol notes, coffee and some dark chocolate and roasted malts. Full-bodied and velvety, semi-sweet on the palate. Nice carbonation, some alcohol warmth. Lasting finish with roasted malts, coffee and some pine cones. Perhaps a bit warming this one, but damn tasteful. 140503

Fra fat på Mandag i annen juni-14: klar og gylden med hvitt skum. De amerikanske humlene viser seg tydelig både i aroma og smak. En fyldig og fin øl med fin bitterhet som ikke er påtrengende (mye furunål, noe citrus og med litt grønne epler mot slutten). Ekstrapoeng for avslutningen, som varer og varer (og varer).

Fra fat på Mandag i annen juni-14: hvitt skum og gylden farge. Intens bringebæraroma. Men bringebærene tar heldigvis ikke overhånd i smaken, dette er en nydelig balansert og kjempefrisk, saisonbasert øl. Tørr avslutning gjør det veldig lett å gripe til glasset igjen. Har de brukt friske bær eller konsentrat, og når ble det tilsatt i prosessen hadde vært interessant å vite. Lindheim får det til!

On tap @ Crowbar. This is a blurry looking golden one with a nice medium sized lingering and eventually islandy white top. No doubt that it's saison yeasted. It's really fresh on the nose with lots of green fruits, wet grass, grapefruit and traces of wheat sweetness and oranges. Smells really nice. It's so what sweet in the taste. Really fruit saison sweet - just the way I like my saisons. The carbonation level is just above average and it feels light oily in the mouth. Something slightly acidic here, like acidic fruits, ripe acidic and sweet fruits. Traces of brett and white gooseberries also here. It's a beautiful one. Would not mind a bottle of this on a late summer night outside on the parking lot. 25.05.2014

On tap @ Crowbar. This is a near-clear golden looking one with a nice big lingering and sidesticking white top. The nose is mild grainy with reeds, soft toffee sweetness and pine cones. Quite inviting. It's mild to average on the carbonation and it has a nice oily mouthfeel. Soft buttery flavors at first, lots of caramel and herbal branches. Bitter birch juices, resin and a fair amount of citrus. Tastes quite nice, a bit astringent finish and aftertaste on this. Something I could purchase again. 14.02.2014

Aroma: Citric hoppy and tropical fruity. Some butterscotch.
Palate: Medium + body. Tad sweet and a fine bitterness. Soft to average carbonation.
Taste: Dominating tropical fruity, citric and some butterscotch.
Overall impression: Quite decent brew, but unfortunately some butterscotch hanging around.

On tap at Cardinal Pub & Bar, Stavanger. Golden colour, white head. Hardly a "double IPA", but a classical and decent "West Coast IPA" it is, fairly dry for the style, with grapefruity and resinous American hops in both aroma and flavour.

Fresh raspberries in the flavour too, but again: not sweet nor sour - this is primarily a BEER, not a sweet Belgian "fruit juice" beer, and no fruit lambic. An excellent summer refreshment!
