Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions. In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction. The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States. On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Bottle, 75cl corked. A clear candy red cider with some pink bubbles. Funky, cherry driven aroma with some oak and a very faint hit of vinegar. Sourish. It's tart and medium bodied, softly carbonated and quite acidic, with a cherry driven flavor. Not much plum or sea buckthorn detected. Hints of vinegar and oak. Some almond. Long finish with cherry dominating. Really delicious this one. 231231

8-4-7-3-14 Bottle, #476, four months after bottling. Pours dark yellow, with a big creamy head. Aroma is bread crust, hay and honey, as well as zesty hops with herbal notes and citrus. Medium body, with average carbonation. Flavour is pilsner malts with light bread, hay and honey, as well as zesty, herbal hops with grass and citrusy notes. Crisp and refreshing, with a fairly short, bitter finish.

Shared can at Bernt and Anne-Ma’s place after 2nd day of X-mas dinner 2023. Deep red. Some white head. Excellent aroma and taste of red currants, rhubarb, lingonberries and sour, wild apples. Good!

Bottle. A black one, or perhaps a tad brown, with a small, dense, beige head. Nice curtains. The aroma has roasted malts, dark chocolate, some licorice and coffee, and a pleasant touch of dark dried fruits and piney hops. Hints of oak in the far back. The dark fruit can be broken down into raisin and prune. It's full-bodied and smooth on the palate, softly carbonated and very lightly warming. Prune, raisin, licorice, roasted malts, some burnt hints, some piney hops and a pleasant touch of lager yeast. Oak hints. Lasting finish. Yet another beauty from Lindheim. 231226
