Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions.
In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction.
The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States.
On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

TCBW2024. Golden colour, small white head. Aroma is floral, some tart peachy and acidic tones with mild plum to it as well. Flavour is floral, smoe wooden, mild plum as well as some acidic peachy tones to it. A bit funk lurking too.

TCBW2024. Close to black colour with a small off-white head. Aroma is cherries, mild spiciness with some slight acidity and a bit tart wooden tones. Flavour is cherries, some toffee, mild spiciness, a bit alcohol and some dried fruity tones as well,

TCBW2024. Pinkish red colour, small pinkish head. Aroma is floral, some raspberries, mild tartness, wood and a bit alcohol sweetness to it. Flavour is raspberries, some sourness, sugary and mild oaky and slightly spicy tones to it. A bit rum sweetness in the end, which compliments the alcohol feel. Woop woop was a mutual sound by FatPhil and me.

500 ml bottle, from Vaaland, Bryne. ABV is 4.7%. Hazy yellow colour, moderate white head. Aroma of mango and papaya, hints of sprucetips. Citric mouthfeel. Flavour of citrus, tropical fruits and pine needles. Medium bitter finish. Nice session IPA.

500 ml bottle, from Vaaland, Bryne. ABV is 4.7%. "Dirty" greyish-yellow colour, moderate white head. Aroma with distinct notes of citrus, pine needles and sprucetips. Flavour with the same elements, slightly on the dry side.

Bottle @ Home. Dark brown body under a moderate sized beige head. Aroma of light roasted, dark malt, milk chokolate and cherry with a hint of vanilla. Taste is smooth, sweet dark malt, not much roasting, some choklate and sweet and slightly acidic cherry. Hint of vanilla and low bitternerss. Medium body with a sweet and slightly sour kind of aftertaste. Quite pleasant with a rich taste in accoranse with the low alcohol.
