Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions.
In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction.
The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States.
On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Bottle @ Gunnfryds megaticker party. Clear, deep red body under a fast fading, small pink head. Aroma of acidic cherry, lemon and hint of apple. Taste is quite mild fruit-ways with rather much acidiy. Some cherry and hint of apple, slightly funky. Medium body with a distinct acidic aftertaste. Not my typical cider, but quite nice anyway.

Taste is sweet, apple juice, apple syrup, some oak, cherry, raisins, and warming alcohol. Fine body with long lasting aftertaste. Very nice, even this sweet there is some kind of balance here. There is an impact from the barrel with a slightly hint of rum. Very nice.

Bottle. Dark brown with a small light beige head. Lightly roasted aroma with chocolate and cherry. Some dark dried fruit, vanilla and coffee. Full to medium body, soft carbonation. Semi-sweet. Chocolate, cherry hints, some coffee and hints of vanilla in the flavor. Lasting finish. Nice indeed. Would benefit from a bit more body and alcohol. 250314

Bottle from Gulating. Practically clear, blood red body with a small, short lasting pink head. Nice aroma of sour cherry and ripe cherry with a little hint of wood. Flavor, like aroma is dominated by cherry, real cherry, no artificial or juice whatsoever. Mild and pleasant acidity with a hint of wood, not so much barrel flavor to be find really but it seems perfect as it is with a complex mix of fresh acidic berries and sweet, ripe berries. Highly enjoyable and very impressive at only 3,75% ABV.

Bottle from Gulating. Hazy gray/pale purple body with a big, foamy white head. Aroma is like a mild but typical hefe mixed with some fruit juice, I think of plum like plum marmalade but it’s not very distinct so I might actually be a bit influenced of actually reading plum at the label. Anyway the flavor is clearly influenced by the fruit, it has a nice, mild sourish kind of plum flavor to the wheat and floral yeast flavor. Slightly unusually but made with a fine balance, I think it is working fine even if it’s not an amazing beer but sure interesting to taste. Medium body and medium aftertaste in the same flavor direction.

Bottle from, Gulating. Unclear amber body with a nice, foamy and lacing tan head. Nice, strong aroma, both citric and piny hops with a fine touch of malt, bread and light caramel. Flavor has a nice balance between sweet malt and bitter hops, smooth malt, light toast/bread, refreshing fruit, piny hops and sharp bitterness. Impressive balanced body for the moderate alcohol level with a fine, pleasant aftertaste. This was really nice, works both as a thirst quencher and a god accompaniment for food.

Slightly unclear amber to copper red body with a nice, creamy off-white head. Aroma has caramel malt and some general fruit but dominated by Christmas spices and then especially ginger. Flavor is sweet caramel malt, some dry fruit, Christmas spices, especially ginger. Medium body with sweet and spicy aftertaste. Decent but pretty one dimensional. By the way, why is this registered as an amber, this is as spicy as aa spicy beer can be. The only amber part of this is the color.

Bottle. Unclear golden body with a dense, lacing white head. Refreshing fruity aroma with pale malt and yeast. Flavor is mild and refreshing with pale malt, fruitiness and moderate bitterness. Nice and easy.
