Description
Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions. In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction. The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States. On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

On tap at Kick. An unclear, amber colored beer with a finger thick off-white head leaving lacings. Rather yeasty aroma, fruity and lightly sugary. Banana. Sugary, fruity flavor with some yeast and a nice bitterness. Full body, pleasant carbonation. Long, fruity finish. Overall, too estery and too sweet, but still nice. 140213

On tap at Cardinal Pub & Bar, Stavanger, as Lindheim Saison Farmhouse Ale. ABV is 6.8%, so I am pretty sure that "Sarason" is just an alias of this beer, used by Cafe Sara in Oslo. Hazy orange colour, large white head. Strong and pleasant aroma of spices (esp. coriander) and citrus / orange peel. Crisp flavour, medium dry but with some fruity sweetness, spicy and citrussy (distinct notes of coriander, also orange peel), peppery finish. Refreshing and enjoyable.

Dark copper. Aroma of continental lager hops. More bitrer than expected. The waterish mouthfeel might be due to the low serving temperature. Good drinkability.

Fra fat på Cardinaltreff jan-13: fin, klar ravfarge og skum som holder seg. Tørr og lett med litt røstet malt og fruktig humle. Besk avslutning. Sikkert lett å helle innpå, men det frister ikke i denne sammenhengen.

Duft av frukter og karamell. Tynt brunt hengende skum. Fin amber farge. God smak av frukt og karamell.

On tap at Cardinal Pub & Bar, Stavanger. Dark ruby colour, large beige head. Pleasant malty aroma, some mild roasty notes, hints of fruity hops. Fairly light bodied. Medium dry and refreshing flavour, dominated by medium roasty notes, decent hops in the finish. Easy to drink, should be quite popular.

Half pint glass, draught at Café Sara. Filmy white layer to an unclear, apricot coloured body. Sparse lacing. Semi-sweet fruity hops on the nose. Sappy taste of fruits joined by a spicy touch and followed by a decent bittersweet finish. Fine bodied. Likable (Oslo 10.12.2013).

Half pint glass, from tap at Café Sara. Clear ruby red body. Small head, remaining. Mid-dry, dark malty smell with notes of citrus. Joint flavour of caramel malts and red orange. Mild roasted ending. Easy to drink. Quite nice (Oslo 10.12.2013).
