Description
Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions. In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction. The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States. On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Bottle @ Både &, Kristiansand. Unclear dark brown body with a small, fast disappearing beige head. Aroma has smooth, dark malt, caramel, dry fruit and vinous. Flavor has sweet, dark malt, fruity, a bit sharp bitterness, vinous, and a bit boozy alcohol. Fine body and long lasting strong aftertaste. It’s nice and feels sweet and dry at the same time, but finishing the bottle I feel the Armanc/alcohol becomes a bit too boozy in the long run. Probably best for sharing.

Bottle. Clear reddish body with a small, lacing off-white head. Nice refreshing fruity aroma, hint of mild vinegar, mild oak and slightly funky. Flavor has a nice fruity acidity, distinct wood, plum and lemon. Light funky. Fine body and pleasant aftertaste. A nice balance between sweetness and sourness makes this an easy to drink version of a wild beer for most people I think. Still definitively the real thing.

Bottle. Clear straw golden body with a big, fast disappering white head and quite much carbonation. Aroma has distinct apple with some general fruitiness and hint of funk. Flavor is a bit gentle and delicate, pure apple, slightly acidic and some balanced funk. Medium body and average aftertaste. Nothing extraordinary going on, but sure a fine, well made natural cider.

Bottle. Black body with a dense beige head. Strong aroma of dark malt, wood, vanilla, Bourbon and Christmas spices. Flavor is sweet malt with the same thing as aroma, wood, vanilla, spices and vinous Bourbon tones. Fine body and long, smooth aftertaste. Really nice and pleasant.

YG. Dark brown color with a beige head. Aroma and flavor is chocolate, cherry, lactose, yeast, malt, vanilla, alcohol, coffee. Weird.

Draught, third, session at Ølhallen, shared with Finn. Missing head, poor lacing, clear beige-golden body. Apple skins and passion fruits on the nose, quite inviting. Mixed taste of apples, passion fruits and ripe plums. Dry ending with moments of mid-tart apples. Quite refreshing. (Tromsø, 28.02.2025).
