Description
In August of 2005, the first jack hammer went into the ground in the empty warehouse in Pleasantville, New York, that was to become the living dream of our founder Scott Vaccaro. We brewed our first batch of beer in December of 2005. In December of 2011 we moved to Elmsford, finished construction of our new brewery, brewed our first batch of beer, and slowly shut down our old location. In 2014 we decided that it was time, after 9 years of making sour and wild ales, to take it to the next level by opening our new sour ale production wing, lovingly dubbed the “Fermento Funk Facility”.

Courtesy of Degarth. It pours a dark color with amber edges and tall mocha head. The aroma is red wine like, oakiness, booze and behind that is sweet malts, vanilla, burnt malts and faint caramelization. The flavor is oak and booze backed up by roasty and burnt malts. I also get red wine fruit and tartness. It seems to lack balance.

Small, but good (lacy) dark beige head, irregular; over (once more) fully black beer. Ink, wood, charcoal, alcohol in the nose. Ink is the only thing from the nose, that lives on in the taste. For the rest, this is an unbelievable "thinnish" "schraal" beer, at least compared to its astronomical ABV. Retronasal coffee milk & fusels. Creamy texture at first, then in the end, it gets wry short of revolting. There’s something awkward about this beer(s). With two tasters we suspect one thing - WHAT IS IT WITH THE BREWING LIQUOR, NO ADJUSTING FROM pH 8+? Another one thanks to puzzl NEw tasting - thinnish MF/flavour returns, but the wry flavour is nearly gone. Definitely better than the first impression, more accomplished, more perfumey-complex.

Beige to greige head, quite creamy & dense; leaving good lace over black beer. Very alcoholy nose, and more smoked than the rum aged; fruity too, especially orange on brandy or whisky; sauce bigarade , caramelized sugar. Warming up, crab apples. Very dry, bitterish taste, with lots of fusels and even quite phenolic-smoked. Finish is (alcohol-preserved) dark & red berries. There is an unmistakeable mineral component. Thinner than real, dry-severe and alcoholwarming. Calcium-holidng water? Very good, if a tad severe. Though the marks might not suggest this, I prefer this to the rum barrel-aged.

Slight gushing to huge, greige head, dense & creamy; leaving good lace over practically black beer, with just an accajou lining. Slightly sourish, lactic acid and grapey nose, fruits of the field, some fusels, alcohol and discreet dried fruits; some milkchocolate - very complex. Sourish, woody & lactic taste with a chocolate background. Black grapes, raisins, and other dark fruit. Faraway rum (positive - normally I thouroughly dislike rum). Ends very dry-woody, even bitterish. Medium bodied, thinner by the acids & fusels. Quite good, if less overpowering than the nose suggests. Thanks to puzzl!

Dark brown, dark tan head...smells of dark fruits, sugar, alcohol and bourbon...thick yet silky body...sweet and malty, almost a saltiness quality to it...vanilla dipped in alcohol and blended with bourbon, fruit and rich malt...well balanced with a lasting finish...very warming to the tummy...and the rest of me...some sediment in the glass...numbingly good!

750ml bottle; Gusher from the get-go; spouted even when half-full; nose of oak, funkiness, and light berries; dark brown with a huge tan head; flavor was funky, probably infected.

750ml bottle; nose of tartness, oak, raisins, and vanilla; black with a medium tan head; oaky sour winey taste wth no alcohol and only very light chocolate flavors.

750ml bottle; Nose is tart, yeasty, horseblanket, and light spiciness; urine yellow with a medium white head; flavor was tart, spicy, lemony, and woody. Pretty good sour ale.

Batch 1. 750ml from willblake enjoyed at my tasting, 10/12. Pour is hazy orange whitish with no head. Aroma is a nice sour mash, maltiness and some citrus. Taste is really well balanced, citrus frui, maltiness and the sour keeps everything lively through out. At no point was the sour overpowering, just perfectly blended. Really, really nice. Thanks for this one Jon.
