Description
In August of 2005, the first jack hammer went into the ground in the empty warehouse in Pleasantville, New York, that was to become the living dream of our founder Scott Vaccaro. We brewed our first batch of beer in December of 2005. In December of 2011 we moved to Elmsford, finished construction of our new brewery, brewed our first batch of beer, and slowly shut down our old location. In 2014 we decided that it was time, after 9 years of making sour and wild ales, to take it to the next level by opening our new sour ale production wing, lovingly dubbed the “Fermento Funk Facility”.

75 cL bottle. As I missed this at the 2007 RBSG I was extremely glad to see Papsoe put this on for the tasting amongst the Copenhagen crew. As huge as my expectations were as huge was my disappointment with this. I really hadn’t missed anything on this from the RBSG, but it requires that someone puts the bottle on the table for you to take the hype out of this one - thanks for that Papsoe, and once again thanks for the huge efforts you make to get stuff like this to the country.
Pours hazy yellow with no head. Slight apple and acidic/citric aroma. Light to medium bodied. Flavour is sour with a minor sweetness lurking through. Not really wellbalanced. Too one dimensional citric, lacks some complexity. Compared to the flemish sours I’ve rated on this site and those tasted but not rated: this brew really isn’t amongst the best imo, I had expected quite a lot more from this.

(Bottle 75 cl) Courtesy of markgugs. Pours completely dark brown and almost opaque, there’s a warm, reddish glow underneath with a light brown head. Distinct and lovely aroma of bourbon and dried fruit. Rather full-bodied with plenty of sweet, roasted malt, vanilla and oak accents. The bourbon really shines all through also flashing quite some alcohol in the finish. Quite interesting. 100807

Very good hop aroma, especially for a Belgian ale. Flavor is sweet and yeasty, some spices, light coriander. Yeast is definitely Belgian. The best tripel I have had in a long time.

Tap at Blind Tiger - gold, fizzy body, with way too much clarity for the style - faint aroma of grain and yeastiness, with no real spice to speak of - kind of thin throughout - a dry grain/cereal flavor dominates (imagine shoving a handful of cracked wheat into your mouth), with some hints of lemon and yeast/bread flavors - lacks the spice and lively fruitiness one would expect - the rather high hop profile does not compliment the beer’s other qualities, and actually makes the beer taste soapy at times - lots of room for improvement here.

Tap at Blind Tiger, poured into a pint glass, shared by Notalush. Color is very pale with s small head. Smell is grainy and cereal like wit. Taste is on the lower end of the spectrum for spice. Actually, I detect something a bit corny, kind of uninteresting and blah. This was a first batch, I will look for this whenever a new batch comes out and see how it improves (I am certain it will). 7/3/7/3/13.
I tried the most recent batch and its better. Not corny or blah anymore, much more like a standard Wit but nothing separates it. Just dull. There is light coriander, muted lemon, and some light banana esters. 7/3/7/3/14

An interesting take on the style. I do prefer something a little more traditional, but this was a success. Sour and spicy aroma. A cloudy yellow beer, not brown or red. Very sour flavor. Some hop presence. I did get grape, before I knew it was made with grapes. Oak as well. I do like that this is exceptionally sour, but there was a grainy character that i just didn’t care for. Quite good anyway.

RBSG 2007 Grand Tasting. Cloudy white body with a small white head. Sour wheat and fruit aroma. Sour grapefruit flavor with some light lemon in the ending.

Thanks Andrew (hophead75) for getting this for me from the brewery. 750ml bottle with a mangled label. Pours lemon juice yellow, such a light colored beer with absolutely no clarity in it. Full of yellow light but cannot see through it at all. Aroma was strong of bretty lemon juice for me. Smelled like lemon musk. Taste was cazy acidic and full of lemon brett. Think lemon juice, add white grapes with a mix of brett. It should have been called lemonade brett. Light and refreshing overall. Spritzy, spiky mouthfeel, tickling my cheeks. Very dry and acidic finish.
Update: was able to sample again, bottle at Blind Tiger. Despite my state at the tijme of the above rating, my notes were actually spot on. I wanted to add that when you get your snooze in there and really take it in there is also a cherry aroma that comes off of fresh brett. Also definite grapefruit juice flavors. A killer brew from a really good brewer.

Batch 2 - this batch is much more balanced, refined, and subtle than the first - the aroma is quite sour up front, but deeper whiffs reveal the muscat grapes in all their glory, with lovely, soft oak behind it, and subtle herbs - the flavor progresses in much the some way - quite tart and acidic up fron, but once this washes away, the oak comes through strong, but not overpowering, smoothing out the other elements of the beer and pulling them together - this oak quality works really well with the muscat grape flavor that swells up behind it, adding a wonderful, tannic, white wine dimension - but wait, there’s more - there are some herbs coming up from underneath that - thyme, saffron, jasmine - man, now THIS is what I was hoping the first batch would be like! - (batch 1 rating, 3.5)[had this a second time at Blind Tiger, again, thanks to Eugene - I must say after having more of this I really don’t get the super-high ratings - there is a huge lemon presence, at times making the beer taste very much like lemonade - the sourness seems to lack the earthy complexities usually associated with wild yeast - quite acidic on the back end - I know all the locals will crucify me for this, but I have to go against the grain on this one] Thanks to beastiefan2k for sharing - very cloudy yellow pour, with fizzy head/carbonation, and a few flecks of chunky sediment floating around - huge lemon, brett, and bacteria aroma, with a very lactic, berliner weisse-like presence (as dickinsonbeer points out), peppery notes - very dry, but with a refreshing tartness - pear, apple and grape skins take a back seat to the sourness and well-developed brett funk (which will probably be huge with a little aging) - mild white pepper spice, pineapple and lemon verbena round things out - while I can’t call this beer an earth-shattering drinking experience, I do love what this brewer is doing.

Deep golden colour. Lots of sparkle but the head doesn’t hold. Fruity, diverse aroma (plum, pear, pomegranate, guava, pineapple and on it goes). Bready malts, light alcohol in there as well. Great concept - the "American-style" ramped-up hops add so much complexity to that fruitiness in the aroma and to a lesser extent on the palate. Nice bitterness - after the number of cloying American (and Canadian) tripels this is really nice to see. Grapefruit, lots of bready malt and a kiss of late alcohol. Just enough yeastiness that you don’t forget it’s a tripel. Cool shit.
