Description
In August of 2005, the first jack hammer went into the ground in the empty warehouse in Pleasantville, New York, that was to become the living dream of our founder Scott Vaccaro. We brewed our first batch of beer in December of 2005. In December of 2011 we moved to Elmsford, finished construction of our new brewery, brewed our first batch of beer, and slowly shut down our old location. In 2014 we decided that it was time, after 9 years of making sour and wild ales, to take it to the next level by opening our new sour ale production wing, lovingly dubbed the “Fermento Funk Facility”.

Can, 0.473l. Aroma of melon, citrus and flowers. Pours hazy dark golden color with thin soapy off-white head and sparkling appearance. Taste starts juicy tropical and stone fruity, following is citrusy and floral, mouthfeel is smooth, while finish is moderate bitter. Medium to full body, creamy texture and average carbonation in palate. Hell awaits…

I like it. Herbal and grassy hop nose, slightly floral. Semi-dry palate, more grassy and herbal hop flavors. Light bodied but flavorful, easy to drink and excellent summer afternoon beer. Pale gold, modest head. Honeyed malts.

2 month old pint can A: Surprisingly dark clear amber gold and even has a tan head. Head is small but long lasting. S: Light but nice floral, grassy scent with honeysuckle and sandalwood. T: Moderate bitterness with bright herb and lemon hop notes. Clean grain and wood malts with very low sweetness. Just slightly brash but largely missing the apple/pear. M: Light and slick with average carbonation. O: Not too far from style. Fun without being too far out.

Ever so slightly hazy golden and light peach coloured body with a fairly large, but very fast-fading off-white head that starts at around three centimetres tall and fades to just about nothing only a few seconds later. Aroma of very dry, ultra-soured and tart, bretty and lactobilly notes with a hint of dryness from spontaneous fermentation, but most of the nose seemingly comes from just the apples themselves. Light-bodied; Very effervescent apple flavour shows at first with some yeast and bretty notes, but this almost feels like a cider at first with how smooth the malts are with the fresh apples and very dry notes that finish up the flavour while leaving a bit of a room for some sweetness, but this is dry and very tart throughout. Aftertaste shows dry, soured apple qualities more than anything else with a sliver of malts coming through and finishing with the smallest note of a residual sugar sweetness and not much else, which is okay, especially for the style, but some noticeable yeast here too at the end. Overall, a nice dry and tart fruit-based beer with some funky yeast notes, but nothing too complex or spontaneously fermented that would me make me recommend that you go out and find this beer immediately - it was nice to try and the age probably helped out on this one, but it was never going to be a showstopper, but that's okay, since it was great to sample in the first place! I sampled this 37,5 cL caged and corked bottle, purchased from Crystal City Wine Shop in Arlington, Virginia on 29-March-2019 for US$9,90 sampled a bit over three years later at my house here in Washington, a few blocks away on 05-July-2022.
