Description
Wilding Cider is made by Beccy & Sam Leach, of former restaurant fame with their wonderful Bristol restaurant Birch. We are orchard cider makers and farmers, based in Chew Magna, North Somerset. We grow mostly Somerset cider apple varieties in traditional orchards, managing them in a careful organic way.
After some years of hobby cider making we went full time in 2018 and scaled up production to 6,500 litres with fruit from our own 4.5 acre orchard and three other orchards around Somerset.
Fruit is picked from the ground in the old way, let mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
We mostly bottle cider in 75cl sparkling wine bottles and mature for at least a year before release.

750ml bottle from Cat in the Glass. Slightly hazed orange gold colour, short-lived white foam head and aroma of apple,fruity, light funk. Taste is tart, tangy, apple, fruity, some leathery funk and drying tannins. Medium bodied, light carbonation, dry tannic finish. Nicely drinkable

Bottle pour at crossover blendery. A hazed golden orange coloured pour with a fine white head that lasts. Aroma is semi sweet, vibrant juicy apple, copella, light tart, fresh juicy apple. Flavour is composed of meaty apple, juicy to a bone dry mineral finish,. Palate is uber dry, mineral, fine carbonation. Good stuff.

Taste is sweet, apple, juicy, initial hints of smoky funk, bacon, leather, and fruity, peachy, with some mellow tannins. Medium bodied, low carbonation, medium-sweet finish. Nicely drnkable.

750ml bottle from Beer Necessities, Bristol. Pours golden with a dissipating white cap. Aroma: tangy apple, sweet apple, caramel, light funky. Taste: dry, tangy apple, apple skins, funky, earthy, some tannins. Medium body with spritzy carbonation.

Taste is sweet, juicy, fruity, apple, with farmyard funk, horseblanket, and mellow bittersweet tannins. Medium bodied, low carbonation, medium-sweet finish. Quite drinkable.
