About
Wilding Cider is made by Beccy & Sam Leach, of former restaurant fame with their wonderful Bristol restaurant Birch. We are orchard cider makers and farmers, based in Chew Magna, North Somerset. We grow mostly Somerset cider apple varieties in traditional orchards, managing them in a careful organic way.

After some years of hobby cider making we went full time in 2018 and scaled up production to 6,500 litres with fruit from our own 4.5 acre orchard and three other orchards around Somerset.

​Fruit is picked from the ground in the old way, let mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.

We mostly bottle cider in 75cl sparkling wine bottles and mature for at least a year before release.

750ml bottle. Orangey gold colour, thin white rim and aroma of fruity apple. Taste is sweet, apple, fruity, peachy hints, bittersweet, with some tangy dry tannins. Medium bodied, low carbonation, medium-sweet drying tannic finish. Nicely drinkable.

750ml bottle from Scrattings. Year 2020, Bottle No. 21/60. Hazy orange gold colour, short-lived thin white foam head and aroma of fruity apple, slightly musty. Taste is sweet, tangy, zingy, apple, fruity, with mellow orchardy funk, some woody notes and drying tannins. Medium bodied, fine carbonation, drying tangy tart tannic finish. Nicely drinkable.

750ml bottle from Scrattings. Orange gold colour, afew short-lived bubbles on top and aroma of fruity apple, mellow funk. Taste is tangy, tart, apple, fruity, orchardy funk, orange juice notes, and soft tannins. Medium bodied, low carbonation, dry tannic finish. Nicely drinkable.

500ml bottle from Scrattings. 2020 Vintage. Golden colour, no head and aroma of apple, mucky hint. Taste is tangy apple, tart, citric, acidic, some funk, and with mellow tannins. Medium bodied, low carbonation, dry tannic finish. Quite drinkable.

750ml bottle from Fine Cider Co. Orangey gold colour, some short-lived bubbles on top and aroma of fruity apple, funk. Taste is sweet, tangy apple, fruity, juicy, with caramel, hint of funk and mellow soft tannin. Medium bodied, soft carbonation, medium tannic finish with some residual sweetness. Nicely drinkable.

750ml bottle pour at Cider Salon 2021, Trinity Arts Centre, Bristol, 14Aug2021. Slightly hazy orangey golden colour, no lasting head and aroma of mucky apple. Taste is apple, fleshy, tart, some mucky horseblanket funk, and drying tannins. Medium bodied, low carbonation, dry tannic finish. Nicely drinkable.

750ml bottle from Fine Cider Co. Opened with a loud pop. Bright golden colour, white bubbly foam head that quickly dissipates to a thin rim and aroma of apple, caramel & funky hints. Taste is tangy apple, fleshy, orchardy, funky, some barnyard & leather with drying spicy earthy tannins. Medium bodied, fine carbonation, dry tannic finish. Nicely drinkable.
