Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay homage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Nokså flat og med en temmelig sur røyk, ikke en frisk røyk av ved, kanskje noe torvrøkt? Ikke helt min stil, for det blir mer ekstremt enn direkte godt.

Bottle. Pours hazy orange yellow with a white cap. Aroma: tart citrus , lemons, herbal, salt. Taste: light to moderate tartness, dry, tangy sharp citrus, herbal, salty edge. Medium body with soft carb. Don't think this version is up to the standard of the original version.

On tap at The Rusty Bucket, Eltham. Reddish orange pour with a light beige head. Aromas of red berries, red cherries, red apple (bit of a red theme going on 🤔), oak. Flavours of red berries, jammy red fruits, oak, sweet tobacco, raspberry sherbet. Very dry. Oodles of tart red fruits in the close.

Bottle online from Rad Beer. Pours hazy yellow orange. Aroma: wheat, citrus, peach, apricot. Taste: light to moderate tartness, dry, zesty citrus, peach, apricot, funky, herbal. Medium body with spritzy carbonation. Another super interesting HG beer

19/2/2022. Can sample courtesy of ITFCDan, cheers. Pours thick black with a small bubbly beige head. Aroma of dark chocolate, roasted malt, caramel, treacle, liquorice, dried fruits. Medium sweetness, medium roasted bitterness. Full bodied, sticky mouthfeel, soft carbonation. Very good.

Keg at Salt Horse. Pours thick oily black with a thin tan head. Aromas of smoke, tar, dark chocolate. Taste brings some coffee in to the mix. Chewy, sticky finish.
