From the humble beginnings of our story in 2007, when Once Upon a Tree was born in the cold outbuildings at Dragon Orchard; we have evolved to multi award-winning craft drinks producer, BBC Radio 4 Food & Farming "Drinks Producer of the Year", Overall Champion Trophy at the International Cider & Perry Competition, and winner of the Bath & West Champion Perry Trophy.

We remain humble and true to our heritage and passion, which is to create the best quality cider from the highest quality fruit; whilst continuing to preserve the tradition of cider making in the area. Founder and wine maker Simon's appetite and knowledge to apply wine making principles to cider production has led to a profusion of creative and innovative products, from multi award winning Blenheim Superb ice cider, to grape skin co-ferments.

Bottle shared at the Cotteridge Convention 2019. Poured a crystal clear golden colour, with a bubbly white head. The aroma is malt, woody, glucose, light crisp floral hop, The flavour is moderate sweet light bitter, with a grainy malt, floral, light woody hop bitter palate. Medium bodied with average to soft carbonation.

Bottle shared at Leightons place. From online shop. A night golden orange coloured pour with no head. Aroma is sweet, sticky apple, custard cream, tangy apple. Nectar. Flavour is composed of medium sweet, sugary, sticky apple, sugar, Nectar. Intense apple, sugary apple.. Some bruised apple, wood. Palate is medium sweet, lushious, syrupy,. Light tang.

lots of apple juice and skins. Semi dry well balanced but slightly on the sweeter side. Medium full body. Pretty nice

Box @ Stable Whitechapel. Pours a generally clear gold, bright golden apple fruit on the nose. Fleshy apple fruit to taste, crisp sour edge with a gentle yet confident acidity, nice tannin presence. Good stuff.

Bottle. Pale yellow color with no head. Aroma is mineraly, almost Riesling-like, light pears. Taste is light pear, a touch custard, mineraly, super dry finish. Oily mouthfeel, flat. Lovely flat Perry, though quite simple!

375ml bottle, 2011 vintage. Bottle sourced from Gloucester Servives on the M5. Pours clear honey golden with a slim white head. Aroma: sweet with ripe pears, stewed apples & caramel. Taste: medium to heavy sweet, sweet apple & pear, honey, toffee, cinnamon hints. Medium bodied with light carbonation. An interesting beverage, and bloody tasty (and dangerous).

Cask at Full Monty. Ripe apple nose, touch of vinegar. Dark golden color, clear. Flavor is mostly ripe apples and a touch of acid.

Bottle shared at the Columbus Tasting 21/03/2019. Many thanks A pale petrol golden coloured pour with a loose white head. Aroma is semi sweet, woody, petrol, light plastic, candy apple, . Flavour is composed of dry tart apple, touch of wood, pithy, . Palate is spritzy fine bubbles, light tang. Little pithy, little booze in the finish.

Bottle shared in London - cheers to Fergus. Pours clear yellow with a fluffy, pure white head. Quite dry, a little musty, dried perry, touches of grass and pale bread. Medium bodied with lively, massaging carbonation. Dry finish, lightly warming. Not bad.
