Description
Pepingen, een prachtige kleine gemeente tussen Halle en Gooik, ligt tussen de glooiende heuvels van ons Pajottenland. Het is opgenomen in het boek ‘De mooiste plekken om gelukkig te zijn in Vlaanderen’ en dat is zeker niet toevallig.
Een hoeve-stokerij? Jawel, we zijn terug naar de oorsprong van het distilleren gegaan door te kiezen voor een oude fruithoeve. En dat doen we niet zomaar, het is grotendeels met de grondstoffen die we zelf telen dat we verder gaan in ons proces. Echte grondstoffen zoals appels, mais, aardappels, tarwe, gerst, …

Pretty cloudy deep ruby red beer, creamy dense pink head, unstable, falls down quickly, non adhesive. Aroma: lots of cherries, a little funky, some marzipan, almonds, nice! MF: ok carbon, medium body. Taste: very nice, lots of cherries, a little bitter, earthy, funky, acidic, a little oxidized. Aftertaste: dry, bitter, tannins, earthy, lots of cherries, decent!

Cloudy pale blond to yellow beer, big solid creamy white head, stable, adhesive, leaving a nice lacing in the glass. Aroma: fruity, juicy, apples, some vanilla, citrus, grapefruit, nice! MF: ok carbon, medium body. Taste: nice, gentle acidity, herbal, very minty, earthy touch, spicy, bitter, some tannins. Aftertaste: fruity, a little sweet, sourish, bitter touch, a bit hoppy maybe, tannins, orange peel, a little oxidized, some walnut, alcohol burn.

Clear pale yellow blond beer, small aery irregular white head, a little stable, non adhesive. Aroma: pretty fruity, some apples, lots of pears, a bit earthy, some tannins, nice! MF: ok carbon, medium body. Taste: gentle acidity up front, malic acid, a little bitter, apple skin, some tannins, pretty dry. Aftertaste: bitter, lots of apples, pear skin, bitter, a little spicy in the finish.

Hazy ochre, thin, off-white head. Aroma of unripe apricot, sour plum, quince, green apple, lemon, wet straw, sour cream. Taste has sour apricot, plum, quince & apple in a sourdough-like malt body, bit lemony with funky straw. Tart, lemony finish, sour grape, funky apple. Medium body, slick texture, soft carbonation. Decent blend, refreshing.

Pretty cloudy blond to light orange beer/cider hybrid, no head. Aroma: lots of apple juice, funky, brett, dry, floral, chemical, a bit weird. MF: ok carbon, medium body. Taste: bitter start, dry, apples, bitter, quite some tannins, pretty sourish. Aftertaste: dry, tannins, pretty bitter, a bit metallic. Not so great.

Pours unclear , small ring of white head. Scent is full, juicy apple. Far less skins than i'm used to in good ciders, probably due to the usage of only jonagold ? Bit funky due to the lambic, providing some balance. Taste is full, sharp, fairly dry, mild apple aroma (fruitgflesh, little to no skins ). Lambic funk. Compared to the hoenshof cider lambiek, you can tell this has much more lambic (an actual blend vs a liqueur de dosage in Hoenshof) which brings balance and interesting components. on the other hand, this cider needs the balance, as 100 % jonagold simply isn't that interesting or good for cider. I like the blend, but the usage of a better base would realy elevate this beverage's endresult.
