375mL undated bottle drunk 3/6/26.
Big and bold, funky Brett and manure with heavy mineral joined with the hops which do fun stuff when added to this mixed culture saison. Rustic grains, and delightful acidity, but not too much. Fruity and fun Brett lingers long.
Brett and saison share space nicely. I appreciate that about Fair Isle: it's not just blasting you with oak, hop and Brett, but is also assertively a Sacch-based saison. Rich, malty texture with other fun grain complexities, and great attenuation. No big acidity, a wonderful Sacch and Brett balance, and some fun hops. This is fabulous!

16 oz. can, pours a clear golden with a medium white head. Aroma brings out gentle grassiness, crisp biscuity malt, and a hint of corn-like sweetness. Flavour has a dry, grassy hop bitterness, dry straw-like character, and crisp biscuity malt. Finishes on notes of straw and dry grassiness. Nice stuff.

Tavour bottle: pours slightly hazy orange with white head. Aroma is light smoke, hints of pear, plenty of excellent funky yeast. Lightly sweet, slightly smokey, hints of earthy brett. Not really sour in any sense. Quite nice.

On tap at Elizabeth Station, pours a clear golden with a small white head. Aroma is full of amaro botanicals, floral notes, and gentle saison yeast—the botanicals dominate. Flavour is extremely floral and botanicaly, with intense amaro botanicals, perfume, and subdued rustic notes. The botanicals really aren’t pleasant here. A rare miss from Fair Isle.

Pale, slight haze. Thin head. Light bretty aroma, little bit of malt sweetness on the nose as well. Oaky, light bugs. There’s bitterness, but not a lot of hop aromatics…which is good because krush and dolcita are two of my least favourite hops.

Pale purple-red. No much head. Lots of ginger up front on the nose. On the palate, it’s quite tart, lots of juicy berry, woody, the ginger is a nice accent to this, effective in this usage. Acidity definitely higher than it used to be here.
