Pours hazy yellow with an off-white head. Taste is tart fruit, white wine, funk, white grape, nice.

On tap at Fair Isle, pours a clear blonde with a medium white head. Nose is complex, with big oak, bright floral hops, wild yeast, and some rustic saison yeast. Flavour has a nice complex wild yeast expression, with rustic saison yeast, some graininess, and a fresh hop expression to accentuate. Cohesive and well-designed, with suitably assertive carbonation. Very good.

On tap at Fair Isle, pours a hazy blonde with a large white head. Nose has a complex wild yeast expression, with gentle oak, and a bright, semi-floral hop expression. Flavour is maybe less elegant, with a duller hop expression than the nose indicates, with a cohesive mix of bugs and a dry bready finish. Not their most complex or elegant saison, but it’s well-brewed as usual.

On tap at Fair Isle, pours a hazy blonde with a small white head. Aroma is dominated by bright Nelson hop tang, which melds beautifully with the wild yeast expression; can’t say I detect the fir tips. Flavour is much more expressive of the fir tips—being the dominant flavour—accentuated by some hop tang, a nice wild yeast character, and spicy rustic saison yeast. Finishes intensely earthy with those fir tips, maintaining that saison feel though with the high carb, bone dryness, and complex yeast character. Excellent

On tap at Fair Isle, pours a clear bright pale golden with a small white head. Nose has a bizarre spicy, sort of oniony, rather herbal hop expression, with just enough biscuity malt to back. Flavour is more cohesive and pleasant, with some lightly spicy and herbal hops, gentle pine, earthiness, and a dry bready malt. Fair Isle isn’t known for IPAs, and this clearly isn’t their best work, but it’s competent.

Can. Slightly hazy pale straw beer with a big white head. Yeast and citrus aroma with light tartness. Yeast and citrus flavor with light floral notes and light tartness. Medium bodied. Yeast and light tartness linger with citrus and light earth.

Bottle. Pours ruby red, clear, medium white pink head, good lacing. Aroma is berries, funk, dust, oak, blueberry, basement. Flavor is light tart, light plus funk, bright berries. Light body, soft mouthfeel.

Big and bold, funky Brett and manure with heavy mineral joined with the hops which do fun stuff when added to this mixed culture saison. Rustic grains, and delightful acidity, but not too much. Fruity and fun Brett lingers long.
Brett and saison share space nicely. I appreciate that about Fair Isle: it's not just blasting you with oak, hop and Brett, but is also assertively a Sacch-based saison. Rich, malty texture with other fun grain complexities, and great attenuation. No big acidity, a wonderful Sacch and Brett balance, and some fun hops. This is fabulous!

16 oz. can, pours a clear golden with a medium white head. Aroma brings out gentle grassiness, crisp biscuity malt, and a hint of corn-like sweetness. Flavour has a dry, grassy hop bitterness, dry straw-like character, and crisp biscuity malt. Finishes on notes of straw and dry grassiness. Nice stuff.
