After several years spent in the production of wines in various regions of France and the world, and a few beers made as an amateur in the family kitchen, during winemaking in 2006 in the United States Emmanuel Rey discovered the extent of the micro brewery phenomenon. in this country.
We are in December 2006. Everything is quickly linked: an internship at the Brasserie Sancerroise in July 2007 to discover “real size” brewing, a training course at the IFBM in Nancy and numerous tests in the family kitchen to highlight point the recipes. At the same time, the search for the place of installation was carried out with the help of the Regional Natural Park of the Haute Vallée de Chevreuse and a place was quickly found near the town of Bonnelles. The project is finally launched!

Dark coppery color wiht an off-white head with good duration. Aroma has notes of resins hops, with good maltiness and some fruity notes. Flavor with notes of resins, peaches, orange peel. and slightly citrus. Mild bitterness in the final with medium duration.

Golden with a white head, good retention. Aroma has notes of herbal and grassy notes. Flavor is slightly bittery with a weak maltiness. Light bitterness in the final with some dry mouthfeel on palate.

Ins Glas ergießt sich ein dunkel orangegoldenes Bier mit ordentlicher Schaumkrone. Geruch sehr malzig, Gewürze, getreidig. Geschmack getreidig süß, leicht fruchtig, Gewürze, leicht alkoholisch.

Bottle at home, 2nd August 2013. Good scent, nothing too complex though. Pours nice and clear, neat head. Taste is hoppy, alcohol well hidden, good malt comes through. Good American style DiPA

Bottle sample at a tasting at Yoav’s place. Thanks avrashi. Murky dark orange-amber. Aroma of stale hops with a bit of floral notes and biscuity malt. Flavor of biscuity and caramelly malt and stale hops bitterness. Medium-bodied. OK but too old.

Bottled at La Fine Mousse, Paris. Cloudy deep straw colour, small head. Sweaty herbal nose. Sweet with medium body and well rounded mouthfeel. Fruity and herbal with sugar and cream. Growing bitterness.

Bottled at La Fine Mousse, Paris. Hazy mahogany colour, small head. Nutty nose with some chocolate. Medium bodied with soft, velvetty mouthfeel. Dryish and mellow with hazelnuts and light toast. Rather low bitterness. Elegant, subtle and very drinkable.
